Potato Chip Cookies Recipe

The first week in December is National Cookie Cutter Week and December 4 is Cookie Day. And most of you probably already know December is the most popular month for Cookie Exchange Parties too. Now with cookie exchanges and the holiday season too; we all like to show off our neat recipes to our family & friends. Today I'm posting my personal photos and recipe for Potato Chip Cookies that's just perfect for gift giving.

Potato Chips in Cookies??  
Yes! This is a favorite cookie recipes because it's so unusual and so fast to make. And the neat thing is, there's no eggs, water or milk in these cookies! I've made them for years, they cook up to be very crunchy with the pecans & potato chips. If you enjoy foods that are sweet & salty at the same time, then you will love these cookies! They are just that.... very sweet and lightly salty.

Cookies as Gifts:
Ohhh yessss!  You gotta love this one!  This recipe is excellent for a bagged gift or even a gifts-in-a-jar. The reason I say that is because it's so easy to make the cookies all the same size by pushing down with the bottom of a jar. I put a video about it some time ago on youtube so please feel free to go watch. 

This recipe is absolutely perfect for gift giving. This cookie is not the every-day-of-the-mill cookie so giving it makes it fun and special. Everybody loves the uncommon cookie & I'm sure you'll love it too.

Make your cookies thick. The dough doesn't flatten out during cooking like many recipes do. They hold their shape in cooking & stay really thick. Their uniform size makes it easy to pack in bags or jars.

Potato Chips Cookie Recipe
Makes 2 1/2 dozen

1 cup sugar
1 1/2 cups of crushed thick potato chips
2/3 cups chopped pecans
2 1/2 cups all purpose flour
1 teaspoon baking powder
2 sticks of Softened Butter
1 teaspoon vanilla

Preheat oven to 350F
Remove Butter from refrigerator to come
to room temperature
Crush Potato Chips and set aside
Mix Sugar, Flour, Baking Powder, crushed Potato Chips and Pecans in a large bowl
Add Softened Butter and mix well
Form into small ball and flatten place on to cookie sheet
Bake at 350F for 14 to 18 minutes until edges are lightly browned.
Cool 5 minutes on the cookie sheets.
Then remove cookies to wire racks to cool completely.

Heres a picture I took of my "Potato Chip Cookies." These cookies are made with ruffles potato chips. I know that's an odd ingredient to put in cookies but you have to try this to believe it. They are really fantastic. The recipe is full of nuts too so I hope you like nuts. Hey guys it's National Potato Chip Day and it always falls on March 14th each and every year. In celebration of one of my favorite things to eat, I found this neat add at flickr for Nalley's Red Seal Potato Chips. It's from the Denver Post, May 6, 1962. The squirrel on the bag is just too cute and what he says would make me buy it. "Light, fresh, noisy and delicious." Potato Chips are my weakness and thats no joke either. I could just about eat them every day and if I had potato chip dip I WOULD eat them every day. Speaking of potato chip dip..... theres even a holiday for that too. March 23rd is National Chip N Dip Day so check back with us and I will be listing a few dip recipes in honor of that day. Until then yall, Happy Potato Chip Day!
