We're having guests over for drinks tonight and I picked this recipe for cheese pumpkins to serve with the drinks. I think it's a fun reminder of Thanksgiving and a great recipe to fix for National Pumpkin Month (October) too. :) Thank you Betty C.

Ingredients:

  • 8 tablespoons smoked Cheddar cold pack cheese food (from 8-oz container), well chilled
  • 2 teaspoons finely chopped peanuts
  • 4 butter-flavored pretzel spindles or sticks, broken in half
  • 16 tiny pieces fresh parsley leaves

Directions:

1. Line small serving plate with waxed paper. Roll each level tablespoon cold pack cheese food into a ball; place on waxed paper-lined serving plate. Refrigerate 10 to 15 minutes for easier handling.

2. With end of toothpick, draw ridges around balls to resemble pumpkins. Dip bottoms of cheese balls in chopped peanuts.

3. Just before serving, insert pretzel halves into cheese balls for pumpkin stems. Decorate with parsley for leaves. Store in refrigerator.

As far as I'm concerned, Thanksgiving not complete without some kind of corn dish on the table. I love corn casseroles & I love Betty Crockers Classic Baked Corn Pudding recipe too. I shucked a lot of corn growing up so corn is just one of those things that's traditional in our family. This dish is perfect with chicken, dressing, mashed potatoes & gravy. Hey it's on our table at Christmas too.

Ingredients:

  • 1/2 cup butter or margarine
  • 1 small onion, chopped (1/4 cup)
  • 1/2 cup Gold Medal® all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups milk (1 quart)
  • 6 eggs, slightly beaten
  • 2 cups shredded Cheddar cheese (8 oz)
  • 2 bags (12 oz) Green Giant ® Valley Fresh Steamers™ Niblets® frozen corn, thawed, drained
  • 1/2 cup chopped fresh parsley or 2 tablespoon parsley flakes
  • 3/4 cup Progresso® plain bread crumbs
  • 3 tablespoons butter or margarine, melted

Directions:

1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish or 3-quart casserole with cooking spray.

2. In 4-quart Dutch oven, melt 1/2 cup butter over medium heat. Add onion; cook 3 to 4 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Stir in milk. Cook 4 to 5 minutes, stirring constantly, until thickened. Gradually stir in eggs and cheese. Stir in corn and parsley. Pour into baking dish.

3. In small bowl, mix bread crumbs and 3 tablespoons melted butter; sprinkle over corn mixture.

4. Bake uncovered 55 to 65 minutes or until mixture is set and knife inserted in center comes out clean. Let stand 5 to 10 minutes before serving.

Pull-Apart Coffee Cake Recipe


My brothers are coming over for coffee this morning and Pillsbury says "Refrigerated biscuits are the secret to making a scrumptiously easy coffee cake." So I'm trying this pull apart coffee cake recipe to go with the coffee. I was thinking.... as easy as this recipe looks; it's got to be a FAST dish to offer unexpected Thanksgiving visitors. Oh and Happy Bread month!

INGREDIENTS

1/4 cup sugar
1/4 cup golden or dark raisins
1/4 cup chopped walnuts, almonds or pine nuts
2 teaspoons grated lemon peel
2 tablespoons butter or margarine, melted
1 can (12 oz) Pillsbury® Golden Layers® refrigerated buttermilk or original flaky biscuits

DIRECTIONS

1.Heat oven to 375°F. Line bottom of 8- or 9-inch round cake pan with waxed paper. In large bowl, mix all ingredients except biscuits.

2.Separate dough into 10 biscuits. Cut each into quarters. Place biscuit pieces in sugar mixture; toss to coat. Arrange in single layer in waxed paper-lined pan. Sprinkle top with any remaining sugar mixture.

3.Bake 20 to 25 minutes or until deep golden brown. Run knife around side of pan to loosen. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan and waxed paper. Cut coffee cake into wedges or pull apart. Serve warm.

High Altitude (3500-6500 ft): No change.

Caramel-Pecan Upside-Down Chai Apple Pie Recipe

Crust
  • 1cup pecans, chopped
  • 1/3 cup butter, melted
  • 1/2 cup packed brown sugar
  • 1 box Pillsbury® refrigerated pie crusts, softened as directed on box

Filling
  • 3 cups peeled, cored and sliced apples
  • 3 tablespoons butter
  • 2/3 cup chai tea latte concentrate
  • Dash ground cinnamon
  • Dash ground cloves
  • 2 tablespoons packed brown sugar

DIRECTIONS:

1. Heat oven to 375°F.

2. In 9-inch pie plate, combine pecans, melted butter and 1/2 cup brown sugar. Place 1 pie crust on top of pecan mixture in pie plate.

3. In 10-inch skillet, cook apples with 3 tablespoons butter over medium-high heat 2 minutes; add the chai tea. Cover; cook 2 to 3 minutes. Add cinnamon and cloves. Drain apples and place in the pie crust; sprinkle 2 tablespoons brown sugar on top.

4. Cover filling with second crust; seal edges and cut a few slits in top crust to allow for venting.

5. Place pie on middle oven rack; place sheet of foil on rack below pie in case of spillover. Bake at 375°F 35 to 40 minutes or until crust is golden brown. Remove from oven; immediately turn pie upside down onto serving plate.

I always make the traditional green bean casserole for Thanksgiving but this year I think I'm going to try this recipe for Supreme Green Bean Casserole. I already cook with a lot of wine and parmesan cheese so this recipe should fit right in for me.

INGREDIENTS:

  • 1 can (18 oz) Progresso® Vegetable Classics creamy mushroom soup
  • 1/4 cup dry white wine
  • 1 cup grated Parmesan cheese
  • Dash ground black pepper
  • 2 bags (12 oz each) Green Giant® Valley Fresh Steamers™ frozen cut green beans, thawed
  • 1 jar (4.5 oz) Green Giant® sliced mushrooms, drained
  • 1 jar (2 oz) diced pimientos, drained
  • 1 cup Progresso® Italian style panko crispy bread crumbs
  • 1 tablespoon butter or margarine, melted

DIRECTIONS:

1. Heat oven to 350°F. In ungreased 2-quart casserole, mix soup, wine, cheese, pepper, green beans, mushrooms and pimientos.

2. In small bowl, stir bread crumbs and melted butter until well mixed. Sprinkle over casserole.

3. Bake about 40 minutes or until hot and bubbly and bread crumbs are golden brown. Let stand 10 minutes before serving.

Cream Cheese Sweet Potato Pie Recipe


I grew up with traditional sweet potato pie always on the table during the Thanksgiving season. When Pillbury came out with a cold version that included cream cheese I knew I would love it for hot Autumn days. This is one of my favorite pies and since today is one of those hot day, this pie will be on my table for tonight's supper.

INGREDIENTS
  • Cream Cheese Layer
  • 1 package (8 oz) cream cheese, not softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon grated orange peel
 
Sweet Potato Layer
  • 1 cup mashed cooked dark orange sweet potatoes (about 3/4 lb uncooked)
  • 2/3 cup half-and-half
  • 1/2 cup packed brown sugar
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 egg
Crust
  • 1 Pillsbury® Pet-Ritz® frozen deep dish pie crust
Topping
  • 1 cup sweetened whipped cream

DIRECTIONS
1. Place cookie sheet on oven rack. Heat oven to 350°F. In small bowl, beat cream cheese and sugar on low speed until well blended. Add egg; beat well. Stir in orange peel. Set aside.
2. Place sweet potatoes in food processor; cover and process until smooth. In large bowl, beat sweet potato layer ingredients with wire whisk. Spread cream cheese mixture in frozen pie crust. Carefully spoon sweet potato mixture over cream cheese mixture.
3. Bake on cookie sheet 50 to 60 minutes or until set and knife inserted near center comes out clean. Cool 30 minutes. Refrigerate until chilled, 3 to 4 hours.
4. Serve pie with sweetened whipped cream. Store covered in refrigerator.

Recipe: Pumpkin Pie Squares



4 or 5 years ago I fell in love with these pumpkin pie squares and baked batch after batch- but in one of my moves I lost the recipe. I thought it was a pillsbury recipe but I couldn't remember. I am happy to say that while surfing the Internet I ran across the recipe once again so I had to share it with everyone. I Love it!

These squares would be great for National Pumpkin Month, Halloween, Thanksgiving or any Autumn Party. Shoot just make them anythime! So moist they melt in your mouth :)

INGREDIENTS
  • Crust
  • 3/4 cup all-purpose flour
  • 3/4 cup quick-cooking or old-fashioned oats
  • 1/2 to 1 cup chopped nuts
  • 1/2 cup butter or margarine, softened
  • 1 box (4-serving size) butterscotch pudding and pie filling mix (not instant)
  • Filling
  • 2 eggs
  • 1 cup flaked or shredded coconut, if desired
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1 can (14 oz) sweetened condensed milk (not evaporated)

DIRECTIONS
1. Heat oven to 350°F. In large bowl, mix all crust ingredients until well combined. Press mixture in bottom of ungreased 13x9-inch pan.
2. In same bowl, beat eggs. Stir in remaining filling ingredients until blended. Pour over crust.
3. Bake 35 to 45 minutes or until knife inserted in center comes out clean. Cool completely, about 1 hour. Cut into squares. If desired, serve topped with whipped cream or ice cream. Store in refrigerator.

Peanut Brittle Day

January 26th is National Peanut Brittle Day. I think peanut brittle is not only the choice for Peanut Brittle Day but it's popular for Halloween parties and Thanksgiving get-together's too. I know my Mother always made it the week of Thanksgiving every single year and shared it with any family or friends that came to visit. 

For this post I've picked a recipe for traditional Peanut Brittle by the Nut Factory. Peanut Brittle goes way way back and will forever be given as homemade food gifts.

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1 cup water
  • 2 cups raw Spanish peanuts
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 2 tsp. baking soda

Heat and stir sugar, syrup and water in a heavy 3-quart saucepan until the sugar dissolves. Add salt. Cook over medium heat to soft ball stage (234 degrees). Add peanuts at 250 degrees. Cook to hard crack stage (290 degrees), stirring often. Remove from heat.

Quickly, stir in butter and soda. Beat to a froth for a few seconds. Pour at once onto 2 well-buttered 15-1/2x10-1/2x1-inch pans, spreading with spatula. If desired, cool slightly and pull with forks to stretch thin. Break up when cold.

Yield: About 1-1/2 pounds of peanut brittle.

This recipe is just perfect for November because not only is it National Peanut Butter Lovers Month but it's Thanksgiving as well. This recipe is peanut butter all the way and you cant go wrong with pumpkins in November either. What a great recipe to serve at your Thanksgiving dinner.

Hey.... put this recipe on your Halloween list too! At Halloween you know how everybody is looking for food that has great visual appeal and this is one treat that just perfect for all the fall Holiday's.

Recipe:
Melt one package of Reese's peanut butter chips and mix with a can of vanilla frosting. Add food coloring. Separate a little bit of the dough and color green for stems. Refrigerate for one hour. Roll into balls, score with a knife and squish them a little between thumb and forefinger. Poke holes in top of pumpkin with a toothpick. Make stems from the green dough or use pretzels and stick 'em in the top.
