Who ate Mixed Berry Pie & Ice Cream on the 4th?

We just celebrated the 4th of July

and we all know it's traditional to eat red, white and blue desserts right. So how many of you ate Mixed Berry Pie with homemade Ice Cream yesterday? If you didn't then which red, white and blue desserts did you eat? When I posted my July 4th greetings to everyone yesterday, I posted a picture of white popsicles with red strawberries and blue blueberries in the pops. A dessert that all the kids would have loved. Now for me... this mixed berry pie with homemade ice cream would satisfy me for sure. I just love how the crust has a tiny word message on top. Yes.... "Love Wins"... love always wins.

Classic Turkey Pot Pie Recipe

I always fall back on a classic turkey or chicken pot pie when I have left-overs from Thanksgiving.

INGREDIENTS
Crust
1 box (15 oz) Pillsbury® refrigerated pie crusts, softened as directed on box
Filling
1/3 cup butter or margarine
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (14 oz) chicken broth
1/2 cup milk
2 1/2 cups shredded cooked turkey
2 cups Green Giant® Valley Fresh Steamers™ frozen mixed vegetables, thawed

DIRECTIONS
1. Heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie, using 9-inch glass pie plate.
2. In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
3. Stir in turkey and mixed vegetables. Remove from heat. Spoon into crust-lined pie plate. Top with second crust; seal edge and flute. Cut slits in several places in top crust.
4. Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover edge of crust with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.

Oatmeal Pie Recipe

Last night I made an oatmeal pie with walnuts and coconut (my photos below) and today I wanted to share the recipe that was shared with me by a Mennonite woman about 20 years ago. With this pie I cut out little leaves for the crust edges.

This recipe brings back fond memories of a bright sunny day
while driving the back roads and getting lost. Really lost. No where near town. But believe it or not we drove up on a little horse pulled wagon in the middle of no where with a lady and a table full of fresh baked pies and homemade bread.

This sweet lady happily shared an hour of cooking conversation and lovingly shared her pie recipes too.
Read the whole story here: The first time I ever ate an oatmeal pie

Ingredients
  • 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 3/4 cup rolled oats
  • 1/2 cup coconut
  • 1/2 cup butter, melted
  • 2 eggs, well beaten
  • 1 teaspoon pure vanilla extract
  • 1 homemade pastry shell- unbaked
  • hand full of any nuts (she used walnuts or pecans) mixed in or sprinkled on top

Directions

  • Combine sugar, corn syrup, oats, coconut, chopped nuts, butter, eggs and vanilla. Pour into crust. Sprinkle nuts on top. Bake at 350° for 15-20 minutes.
  • The secret she said was to let it sit on top of the stove for 30 minutes before baking! You don't read that in any recipes. Really! Just do it! It softens the coconut and oatmeal. :)
  • She said you can add the nuts in the mix or if you want the nuts to sit on top of the pie to be pretty, just evenly sprinckle them on top after you've pored your pie in the pie shell.

Decorating
Her pies were not decorated but since it's the Fall Season I thought I would make this recipe my own by cutting out a few leaves with cookie cutters and dress up the edges of my pie. I love how festive it looks and I even added the dough scraps to the middle of the pie too.

Use up any leftover dough:
I make sure to bake any left over leaves in the oven that doesn't fit on the pie. I cover them with butter and honey or sugar. It makes a beautiful tray of sweet dough leaves for some sweet pop in the mouth crunch.

This really is a favorite pie for me and every time I eat it I think of that sweet young lady.

When Pillbury came out with a cold version that included cream cheese I knew I would love it for hot Autumn days. As a kid I loved little debbies oatmeal snack cakes. Mother would buy them and put them in Daddy's lunch sometimes. If I was good I would get one as an afternoon snack.

Little Debbies calls them cakes but when you search for recipes you find them listed under cookies. Over the years I have tried many recipes but I find this recipe is the closest taste to little debbies. You will find recipes for butter cream  fillings but I must have the marshmallow cream recipe myself. It's fantastic! Be it called a cookie or cake it makes my table every October. And what better way to celebrate National Cookie Month than by making these wonderful treats.

In celebration of Halloween
If I'm hosting a Halloween party or having company over I like to add orange food coloring to the filling to make it more Halloweenish. Sometimes I even pipe a chocolate spider web on top too. I don't think I have to tell you how fantastic the flavors of chocolate and marshmallows are now do I. wink~

1 cup margarine
3/4 cup dark brown sugar
1/2 cup sugar
1 tablespoon molasses
1 teaspoon vanilla

Make sure you melt the salt in the water. If you skip this step I find the treats will taste saltier. wink~

Peach Pie Day

It's August 24th and that means its National Peach Pie Day. So today you have an excuse to bake yourself a crusty peach pie right. My mother was forever baking pies when I was growing up but every time she gathered a basket of peaches from our peach trees, she always made a peach cobbler instead of a peach pie. Her second choice was always fried peach pies. But I guess anyway you can get a sweet dessert made with peaches is fantastic. I hope everyone enjoys National Peach Pie Day by baking a pie. See recipe here

Oreo Cookies Day

Heyyyyy Pam here everyone!

We are still in National Cookie Week and would you believe it, today is National Oreo Cookies Day! I was reading up on oreo cookies and found out that this little black and white treat was introduced to the world in 1912. I also found out that the oreo cookie is the best selling cookie in the U.S.?? Hummm I thought the chocolate chip cookie was the #1 cookie.

I remember when I was a kid in grammer school all the kids who packed a lunch always had oreo cookies. Once they ate them, they would have black cookie between their teeth the whole rest of the day. hahaha- memories~

The picture you see to the right is a oreo cookie pie. I was letting a large creamy bite melt in my mouth when I realized it was oreo cookie day. I thought- oh my gosh I've got to take a picture of this pie. I like to make the pie myself with marshmellow fluff but most recipes don't call for it. It's just the way I like it. I will put the recipe below of how I make mine.

I call mine a "Ore-nilla-fluff Pie."
(do you get the name? Ore - for the oreo / nilla- for the vanilla pudding / fluff -for the marshmellow fluff)

1 lg. bag Oreo cookies
1 lg. Cool Whip
2 sm. French vanilla instant pudding
1 (8 oz.) cream cheese
3 c. cold milk
1 jar of marshmellow fluff

Crumble 2/3 of Oreo cookies and spread in bottom of pan.
Combine pudding and milk. Blend in 3/4 Cool Whip and cream cheese. Fold in remaining 1/3 of cookies. Spread over crumbled cookie base. Top this layer with a layer of marshmellow fluff. Put whip cream on top if you like with crushed oreo cookies sprinkled on top. Chill and serve.

If cream cheese is to rich for you, you can leave it out. I'm just a cream cheese nut so I add it to everything. hahaha- The recipe will work perfectly without it. Hey.... St. Patricks Day is this month and you can make a green mint version of this pie as well. My hubby is crazy about mint and he's crazy about cookies so he loves it.

Guys if you don't want to make this pie you can always find the original oreo cookie pie in many of the grocery stores now. They have become quite popular with the kids.
Happy Oreo Cookies Day to All! Pam
