Food Inspiration / Zucchini Pizzetta Bread or little Pizza


I have some Food Inspiration for you today. When I only have a little.... I make pizzetta bread. 

This picture is a good example of an easy way to use up the last of your zucchini by slicing it up and baking it on homemade bread. (pizza / pizzetta) Which is exactly what I did for my lunch today. Early this morning I went out to pick some zucchini because I had in my mind, I was going to make some fresh baked lofts of zucchini bread. But when I went out, I found that I didn't have any. Animals came in the night and ate my zucchini and only left me with 1 little zucchini. So, when I only have a little... I make pizzetta bread instead.

Let's talk about Pizzetta so everyone understands

A pizzetta (plural: pizzette) is a small pizza that can range in size from a finger food at around eight centimeters (3 in) in diameter to that of a small personal-sized pizza. I think they work great not just for a light lunch but for a party table where small finger food is being served. For me... I make it the most when I only have a little bit of something left that I need to use up. Wink~

How it's traditionally served

Pizzetta can be served as an hors d'oeuvre, a snack food and as a light meal. It's common for it to be served with wine to complement the dish. Which is exactly how I enjoyed it today. It is sometimes prepared without a sauce, but you can make a sauce if you want to. I didn't make a sauce today; I just used herbs and zucchini and enjoyed a glass of wine with it and I very much enjoyed it. Pizzetta can be prepared using flatbread as a bread base, but puff pastry is also used too. Additional herbs and greens can be added after pizzetta has been cooked.

Herbed Tomato Salad with Goat Cheese


When your patio garden is producing lots of tomatoes you find yourself eating lots of tomato salads topped with goat cheese, herbs and flavored oil.

Hello friends! This beautiful picture is a great example of how I also experience lunch on many summer days especially when it's tomato season. It looks like it's not much of a lunch I know but you would be surprised how much of a punch the herbs bring to the tomatoes. Once you add cheese and drizzle with oil... it turns into the perfect treat to spoon on top of freshly made crusty bread. Which is what I like to do.

Creamy Cheese

Now the creamy cheese in the picture is goat cheese / goat cheese is excellent with tomatoes and I just love any type of soft cheese like goat cheese, but I don't always have goat cheese, so I use whatever type of cheese I have. When it comes to soft cheese you can go with Brie, cream cheese, camembert or any Italian soft cheese like ricotta, mascarpone, mozzarella etc.

Fresh Tomatoes

Well for me... I use whatever tomatoes are ready to eat from my patio garden. All my tomatoes are growing in large flowerpots so it's a true patio garden. At the moment I have 8 different varieties of tomatoes and sometimes my tomato salad is very colorful with its black tomatoes, red tomatoes and yellow tomatoes. When you have several varieties of tomatoes the sweet flavors are very different and the mix of them all together is a full body taste of sweetness that you just have to experience to know what I'm talking about. It's very satisfying.


Fresh Herbs

I go on and on about herbs all the time because I just love fresh herbs and tomato salad with fresh herbs in it is no different. In fact, it's soooo much a MUST when you're eating a tomato salad. You just can't skip this.

Is there a bad herb to use on tomatoes? I haven't found one yet that tasted bad but I'm sure I haven't tried the whole list of herbs to really say. I do however know I use thyme, oregano, rosemary, chives, sweet basil, purple basil... gosh I use all the basils.

Oil & Vinegars

Now you can find tomato salad recipes all over the Internet. Everything from those using olive oil to flavored oil to balsamic vinegar to red wine vinegar to apple cider vinegar used in it. I usually use whatever I have in the kitchen. I enjoy making flavored oils and vinegars so there's no telling what I reach for to drizzle on top. Some people even marinate the tomatoes for a time before they serve. I know some people splash it with lemon juice too.

Sugar & Garlic

Some recipes call for sugar sprinkled on top but for when since I use a variety of tomatoes, I don't need the sweetness, so I pass on that. Garlic is another option, but many will pass on garlic if they are serving garlic bread.

Red Onion

Red onion is called for in many of the recipes. I love red onions, so I use it if I have it. Sometimes I chop them up really small and sometimes I just toss them in as ringlets.

My Closing Thoughts~
  • 💰I think tomato salad is a budget lunch for sure. It costs very little to make this as a meal and is very refreshing on a hot summer day.

Cream Cheese and Chives on Toast


 Are you looking for ways to use up some of those flavorful chives in the garden?

Well friends I have a simply easy way to do it. Now keep this in the back of your mind.... remember that chive and cream cheese dip that you always find at parties? You know the one... the thick cracker dipping one. Yessss the one made with cream cheese, a little garlic, a little parsley, lots of chives, lots of pepper and a splash of lemon juice. 

When it comes to the party spread you mix everything all together but when it's on toast you just toast your favorite bread slices, then spread on cream cheese, then simply sprinkle the rest on top. The chives, the onion, the parsley and the seasoning. Sprinkle sprinkle~ Your open face sandwich is ready. It's fast and it taste so good. It tastes like you're at a party! Ha!

Noodle Egg Salad with fresh chives / working with left overs


 I'm Craving Egg Salad but no bread to spread my egg salad on

No worries... I will just take the ingredients I have and make a noodle egg salad with it. That should still satisfy my craving for the taste of mayonnaise egg salad. 

I have plenty of chives on the patio, so I've chopped up plenty of that. In fact, it's been a full day of working with my chives. I spent much of my time watching the bees and butterfly's enjoying the pretty purple blooms. I had to take photos of the whole magical moment. I think I will save the shots for a future video. Giggle~ 

My brother gave me fresh eggs from his hens and fresh eggs always taste better, sadly he is getting rid of all his chickens he's had for a thousand years so no more fresh eggs for me. My oldest brother lives next door to me so I'm going to miss hearing those old roosters crowing each morning.

Now let's see what I have in my frig to work with. 

I have to say I'm not one who follows recipes. I mostly use what I've got and today is one of those days. Looks like I have mayonnaise, a tad bit of sour cream I need to use up, a 1/4 of cream cheese I need to use up and the bottom of the tub of yogurt I need to use up. I have plenty of boiled eggs now. I have plenty of chopped onions and chives. I have mustard but getting low. I have cayenne pepper I just picked off the vine so maybe I will chop up one of those. Oh there's what looks like 1/5 cup of grated cheddar cheese. I will get rid of that too. Wow, there's some capers! I forgot I had those! And... don't know what that is, better toss that out. And.... well no crackers or bread. But I do have noodles! Hummm... I think that's the making for a Noodle Egg Salad don't you? Wink~

Time to mix it up

Now all I have to do is cook up the noodles and mix it all together. I will let it rest for an hour or so to let the flavors mingle while I finish my chores and then I will be good and hungry for a simple lunch.


Making pasta salad is a great way to use up leftovers

It's really hard to mess up a noodle salad. It's almost fail safe. I like how most mayonnaise and cream base noodle salads can be eaten hot or cold just like a egg salad. Now this pasta salad has just as much boiled eggs in it as the pasta so the whole thing is a pretty yellow color with a few specks of red from the cayenne pepper and then the bright green color from the chives. It's pretty. 

But the best part is... using up all those left-over containers in the frig. "Yes" - The seasoning I used was simple. salt, pepper, garlic powder & a bit of celery flakes. I topped it with a bit of Avocado oil just because I love the stuff.

Mealtime Monday / Did you munch chicken for lunch today?


 I was craving chicken and all through the day I kept thinking about it.

I was at work today and every time I turned around somebody was telling me they we're headed to go to lunch and get themselves some chicken. Seems like everybody in the world was eating chicken today and it made me so hungry for chicken. It didn't help either that Zaxby's Chicken shares the parking lot where I work and all I could smell all day long was chicken wings. Plus.... across the street is Chic-fill-A and all I could think about was their juicy chicken sandwiches and right next door is Popeye's Chicken and I know how good their spicy chicken is. And being that I was working outside all day long didn't help. I couldn't get away from the smell of chicken. I wanted it so bad. LOL~ 

I had been writing an article about Chicken Wing Day

Day before yesterday I was working on a post about National Chicken Wing Day which is celebrated annually on July 29th. I think this was my start of craving chicken because I was doing so much reading about chicken wings. LOL~

Well, to make a long story short:

I know I don't have to tell you this because you already know... but as soon as I got off work, I went straight for the drive through for some chicken wings. Yep, I grabbed myself a quick snack as I made my way to the grocery store to buy a bag of wing meat so I could cook myself up all the different flavors that I wanted. Yum! You gotta love all those wing sauces!!!

Ranch Dressing:

Oh yes... nobody eats wings without ranch dressing, do they? No no no! But you have to make homemade ranch dressing. That's the best way to go. The stuff in the bottle just doesn't do it unless you wizzz it up a bit. Ha!

In Closing

🍗I satisfied my craving for chicken this week for sure. I ate so much till I don't want to even look at another piece of chicken much-less smell chicken. Oh no! I go back to work tomorrow. I'm going to smell chicken again. Wink~

Munch for Lunch / It's a Crispy BLT Sandwich kind of day

What a beautiful sunny day it is today. A day that is perfect for picking some fresh tomatoes off the vine and frying up some crispy bacon for a great BLT sandwich.

About the video above:

Hello friends.... yep that's my hands in the video picking those red tomatoes off my tomato plant and yes that's my hands flipping that bacon over for some crispy bacon to put inside my sandwich. The lettuce is also from my patio garden as well.

Now I don't know about you but I really love a BLT sandwich. I think I eat them more for breakfast than I do for lunch... but for today I ate it for lunch.

Now for me I like it on toasted bread:

I'm one of those people that won't eat the sandwich unless it's on toasted bread. It just doesn't taste the same on soft bread to me. So I say toast and butter that bread!

Mayo it up!

It's mayonnaise for me and I mean a lot of it too. Don't give me any of that salad dressing stuff for a BLT. LOL~ And.... "Pepper Down"!  I have to have lots of black pepper on it too. I go light on the salt because the bacon adds a lot of salty flavor already. Sometimes I shake some cayenne pepper on it too. But that's it. I keep it really simple just like a BLT sandwich was meant to be.

Fresh Tomatoes are more flavorful:

You have to use fresh tomatoes guys. Those tomatoes in the grocery store just don't taste as flavorful as a fresh one does. It is a dramatic difference I assure you. In the video you will see me picking a few tomatoes off my tomato plant for the sandwich.  And let me say this... I want everyone to know that you can easily grow a tomato plant in a flowerpot and don't need to have a yard to grow it in. Just put that pot on a sunny porch and grow you some tasty tomatoes.

Munch for Lunch / Antipasto


 When you're tired and hungry what's the fastest thing to pull together for lunch?

You guessed it! The picture above is Antipasto! Now "Antipasto is the traditional first course of a formal Italian meal. Usually made of bite-size small portions and served on a platter that everyone can serves themselves from, the purpose of antipasti is to stimulate the appetite. Ok Italian readers do I have that right? At least that's what my research told me.

Well for me, I think this is the perfect "Munch for Lunch" 

This may be traditional for formal dinners but for me it's the perfect munch for lunch when you're tired and don't feel like going to a lot of trouble to fill your belly. It's so easy to open the fridge and pull out the cold stuff and munch out. I bet most of the stuff in your fridge right now is the makings for Antipasto. Now let's look into what actually is the common food for "Antipasto".

 Typical ingredients of a traditional antipasto include... 

...cured meats, olives, pepperoncini, mushrooms, anchovies, artichoke hearts, various cheeses such as provolone or mozzarella, (oh I love provolone cheese) (it's always in my frig) pickled meats, and vegetables in oil or vinegar.

Well, I've been eating Antipasto for lunch for years and didn't know it.

I had no idea my favorite things that I pull out of the refrigerator was the traditional first course of a formal Italian meal until I started doing some research and found my taste buds, had been craving Italian food. LOL~

My research said there was a seafood version too 

but I don't usually keep seafood in my frig and I don't think I have ever ate any seafood cold either. Nor have I ate any in olive oil or vinegar. That's an experience I haven't experienced yet. wink~

It seems the seafood version is calamari, mussels, smoked salmon, tuna fish, olives. What do you say? Do I have any readers from Italy? What else goes with this? I'm sure the contents of an antipasto vary greatly according to regional cuisine too.

It seems many people compare antipasto to hors d'oeuvre

but antipasto is served at the table and signifies the official beginning of the Italian meal. Do you know what this reminds me of? Take a look at the photo above again. If it was larger portions I would think it would pass as a Charcuterie Board spread don't you think? 

In Closing

Antipasto may also be referred to as a starter, or an appetizer. But today.... for meeee..... it was a meal and a no fuss meal that I thoroughly enjoyed.

 While this subject is fresh in my mind, I think I'm going to work up some posts about "Charcuterie Boards" and "Grazing Platters" for you guys. Everybody's always looking for easy ways to entertain so I'm thinking those posts would be helpful. So keep check if your interested in that. I will start doing my research on it come Monday ok.

Menu: Steak, sugar snap peas, baked potato & green salad

Well guys I'm celebrating one of my favorite meals. 

I don't know whether to call this my "Munch for Lunch" meal or a "Super Sunday Supper." Lol! The fact is I cooked enough for both! Now having said that... I think I will list it in both categories on the right-hand side of the blog; (in the side bar) in case you ever need to find it again.

What's on the menu for today?

Today we have a beautiful fried steak in butter and bacon grease.... we have fresh sugar snap peas from my patio garden... we have a baked potato smothered in lots of melted butter and sour cream. And last but not least... a fresh green salad with lots of dressing on the side.

The Green Salad:

You can't see the salad very much in the picture, but the lettuce was fresh and crisp. I went with blue cheese dressing and a homemade Italian dressing. What can I say, I mixed the 2 dressings together because it tastes delish! 😃 (just so you know... this is my go-to for when I eat spaghetti or manicotti) The rest of the time I'm a ranch dressing girlie.~ Now all the dark green sprinkles on top of the salad is the heavy amount of herbs that I chopped for the top. I always use what ever my herb garden has to offer. 

Steak: Now I did soak the meat in a salty brine

Yep, I did soak the meat in a salty brine of pink Hamalian salt for a bit. I always do this with a cheap cut of steak. Ha! It helps the meat absorb more water and hold its moisture. Makes it more tender / And nice flavor

Well, there's my Munch for Lunch for today

I wish you could have smelled the meat cooking... and I wish you could have tasted how yummy it was too. The picture just makes your mouth water, doesn't it? Yep... it was steak day at my house and the fresh seasoning and herbs is what made it taste so fresh and good. And ya know what... I didn't even have an expensive cut of steak either and it was tender and juicy. 

In Closing: This is a favorite meal for me~

There's just something about buttered sugar snap peas that goes perfect with a steak. Would you like to see my video of my favorite way to cook the sugar snap peas? My last 2 articles have been about tomatoes, and I just can't stop there. Nope! As I was writing my last 2 articles, I noticed June 1st was marked for National Tomato Day. Yip eeee! I'm smack in the middle of tomatoes up to my neck and I get to write another article about tomatoes all because of "Tomato Day."

Sooooooooo

My Munch for Lunch today is a grilled sausage dog topped with fresh off the vine green tomatoes.

Have you ever eaten a sausage dog like this?

Well guys....! I want you to try something different and see if you like these combined flavors. I really love it. Now the meat in the photo is grilled red hot sausages but I have tried fresh green tomatoes with beerbrats, kielbasa and I absolutely love it with Pork Bratwurst but I didn't have any more so I went with scoring red hots and grilling those instead. Now I like a good dark char on my dogs no matter what type of meat it is.

Fresh diced green tomatoes are firm and crisp. 

Green tomatoes taste great on a sausage dog when they are fresh cut. Try it fried with onions sometimes too ok. You know how much we love sausage dogs with onions and green peppers so try it with onions and green tomatoes instead. Come onnnnn.... give it a try. 😃

In the photo above of the tomato on the cutting board; is a tomato I picked from a miniature growing tomato plant. Sometimes they are called "table top" tomatoes because they only get around 1 to 2 feet tall and common to be placed on a table to grow. 😉 Did you know there was such a thing? They look like Roma tomatoes don't they?

In Closing

I encourage everyone to try new things and experience new flavors. I know most people don't eat green tomatoes but I was raised on them and it only seems natural for me to eat them on everything. lol......  Have a great lunch break today. Pam

Munch for Lunch / Green Beans, ham, potatoes, onion and cornbread


 Yesterday I shared a clip of my green beans cooking... 

and I talked about fresh green beans. Today I wanted to share pictures of my "Munch for Lunch", my green bean complete meal so you could see the whole plate. This meal was my Super Sunday Supper and the left overs because my "Munch for Lunch." LOL

Now I want to share a link with you.

Photo angles

I took several angles of the same plate so you could get a good look of my "Munch for Lunch" I call this recipe my "Sweet Heat Green Beans." Why? Because it's sweet from a tad bit of honey and it has heat because of the peppers.


You can tell this meal has everything you need for a complete meal. 

It has ham for the meat, it has healthy green beans, it has onion for a vegetable and it has beautiful brown bottom potatoes and last but not least... for the bread, I made southern cornbread.


Browning the potatoes

Now if you watch the video you will be able to see how I was able to brown the potatoes for a 1 pot meal. The key is cooking the meal in a flat pan. That way you can slice the potatoes in half, then press the flat side of the potato in the bottom of the pan.


Cornbread to taste

Anytime I cook ham and beans I always want soft on the inside and really crispy cornbread on the outside for my bread. Now since my beans have a hint of sweetness to it, because of the honey... I choose to cook a savory cornbread instead of a sweet cornbread.


Butter on the bread

I don't know about you, but my mouth says I need lot's of real white butter on my cornbread. You can see from this picture that the cornbread was still hot and had started slightly melting the butter and it was soaking into the cornbread. Yummmm!

I really enjoyed this Southern Meal!

I have to tell you that this meal was very satisfying when it came to taste.  The grease in the ham seasoned the beans and potatoes just perfect and allowed the potatoes to brown even in a pan that had water in it. It was also satisfying from it's beautiful colors.  It had a beautiful circle of different food colors all around the plate that would be a nice visual effect if you had dinner guests.

Munch for Lunch / My Sunday Sausage Boil


 Munch for Lunch

❤ Sometimes I like to share with you my munch for lunch. I like to show you what I'm eating for the day and a bit of information about the food. I for one love to see what everyone is eating and how it's prepared. So here's what I cooked and enjoyed for lunch. "My Sunday Sausage Boil."

Just a relaxed meal prep

❤ Now this meal is my Sunday meal so it's a bit more exciting than a sandwich. LOL - On Sunday, I seem to be more relaxed so I enjoy making a meal that takes a bit more time to prepare and cook than any other day of the week. I like to walk around with my cup of coffee or tea and chop a bit, drink more coffee, peal a few potatoes, drink more coffee, peal my carrots, pore more coffee, stir the boiling pot, pore more coffee. In fact, after each hot tea or coffee refill I do I stir the pot. ~Smile~ Just a relaxed meal prep.

I was in the mood for a sausage boil today. 

❤ Now I don't know what you like to add to YOUR sausage boil, but what I had in my kitchen for today was sausage, cabbage, carrots, potatoes, and onions. I love it with parsnips and rutabagas too but I think that makes it a root boil. ??? ~Smile~ Now a sausage boil is a slowwww rolling boil. You don't want the boil to bust the veggies all to pieces.

I love the flavors of all these veggies mixed together.

 ❤ It's a lot like soup but it's large chunks of veggies instead of small chopped veggies. I really love how the sausage flavors the boil water. You know how sausage has that greasy spicy flavor. It's great! I always add 1/2 stick of butter to the boil too. You have to have butter when you cook with potatoes and cabbage yes?! Gotta have some oil in the water too. Might as well add some chicken stock while your at it. LOL

Now cabbage is already in the boil but for some reason I like cold coleslaw (which is cabbage) on the side. I usually chop 1/2 a head of cabbage for the boil and the other 1/2 I use for cold coleslaw. Now I like to make creamy coleslaw. I like it made with mayo, sour cream. Bring on the spoonful of sugar too. Sometimes I add a splash of vinegar to it but I'm not making sour vinegar coleslaw, I'm making creamy sweet coleslaw. Yummy!

Cornbread for soppin'

❤ When I make a sausage boil, I always want crumbly cornbread as the bread I serve with it. There's just something yummy about soppin' the super seasoned boil water with cornbread. Now I like to cook both sweet and savory cornbread but with the sausage I prefer having savory over sweet for this meal. Savory cornbread is perfect when you scoop a spoonful of sweet coleslaw on it and take a bite. Yummy!

A filling and satisfying meal

❤ There's my "Munch for Lunch". A very filling and satisfying meal for sure. Don't forget your favorite sides like .... sliced cold onions... hot peppers.... or sweet pickles. Cold purple beets are a nice touch too.

My Munch For Lunch is a Fried Carrozza Sandwich

I was checking out the Internet, looking for something that would work for Meatless Monday and something that would work for my "Munch for Lunch" today. LOL! I wanted something fast and in a sandwich form since I have a long list of things to do today. What I found was this Fried Carrozza Sandwich. I knew I would love it because of all the cheese.
