Health Benefits and uses of Chives


 My Chive blooms did really good this year ~

They produced the prettiest purple blooms I've ever seen them produce and I think they are so pretty in the herb garden. I really love the mild onion like flavor, and I think I use it the most in salads, in bread dough, soups and in cream cheese cracker spreads & on my potato dishes and in all my egg dishes for sure. 

Not only do I love to cook with it but I really like it in the garden because it repels insects that might damage my vegetable plants. Ya know, it's funny how the chive plant repels insects but the beautiful purple blooms attract bees. lol! I love having plants the bees love.

Now the reason I wanted to post about chives today was because I want everyone to know about their benefits to human health. "The medicinal properties of chives are similar to those of Garlic, but weaker; the faint effects in comparison with garlic are probably the main reason for their limited use as a medicinal herb."

Health Benefits and uses of Chives

  • Detoxify the Body: Chives have mild diuretic properties, and combined with the other free-radical scavenging and antibacterial qualities, chives are a wonderful way to detoxify the body. By stimulating urination, chives can help the body get ride of excess toxins, salts, water, and even fat, keeping the organ systems running smoothly and clearing out any dangerous substances that could do us harm.
  • Cancer Prevention: One of the most exciting areas of research for all members of the Allium genus is the role of quercetin in preventing certain types of cancers. Although research is still ongoing, early results show that quercetin can effectively prevent a wide range of cancers, including breast, prostate, colon, lungs, and ovaries. The antioxidant activities of vitamin C and vitamin K contribute to this prevention as well, helping to reduce levels of free radicals in the body that can hasten the spread or appearance of cancerous cells. Zeaxanthin and lutein, two other antioxidant compounds found in chives, have been linked to lower chances of oral cancers.
  • Vision Health: The carotenes found in chives, namely lutein and zeaxanthin, are directly responsible for reducing oxidative stress in the ocular system and delaying the appearance of cataracts in the eye. They also help to slow or prevent macular degeneration, keeping your eyes healthy well into your old age.
  • Immune System: The high levels of vitamin C found in chives help to boost the efficacy of the immune system by stimulating the production of white blood cells and stimulating the production of collagen, which is an essential component in the creation of new blood vessels, cells, tissues, and muscles.
  • Bone Health: There is a wide range of vitamins and minerals found in chives, but one of the most important is certainly vitamin K, an essential nutrient that isn’t widely found in many common foods. Vitamin K is very important in the maintenance of bone mineral density and bone integrity. As we age, our bone mineral density begins to drop, leading to conditions like osteoporosis and exacerbating inflammatory conditions like arthritis. High levels of vitamin K, like those found in chives, can help to produce osteocalcin, which is a key part of maintaining mineral density in the bones.
  • Digestive Issues: The allyl sulfides and other unique organic compounds found in chives deliver similar benefits to the body as garlic, and as such, can effectively ease digestive discomfort. Furthermore, chives have natural antibacterial qualities that can eliminate a wide range of bacteria, particularly those in the salmonella family, which can wreak havoc on your gastrointestinal system. More specifically, chives can increase the nutrient uptake efficiency of your gut, ensuring that you get as many of the nutrients from your food as possible.
  • Heart Health: One of the most important organic compounds found in chives is allicin, which has recently been linked to reduced levels of “bad” cholesterol in the body and improved heart health. Allicin is also connected to lowering blood pressure; when combined with the vasodilatory effects of the potassium found in chives, this unassuming herb can have a major impact on reducing cardiovascular strain. Furthermore, another organic compound found in chives, quercetin, has been directly connected to lowering cholesterol levels and plaque in the arteries, effectively preventing atherosclerosis and lowering your risk for stroke and heart attacks.

Cream Cheese and Chives on Toast


 Are you looking for ways to use up some of those flavorful chives in the garden?

Well friends I have a simply easy way to do it. Now keep this in the back of your mind.... remember that chive and cream cheese dip that you always find at parties? You know the one... the thick cracker dipping one. Yessss the one made with cream cheese, a little garlic, a little parsley, lots of chives, lots of pepper and a splash of lemon juice. 

When it comes to the party spread you mix everything all together but when it's on toast you just toast your favorite bread slices, then spread on cream cheese, then simply sprinkle the rest on top. The chives, the onion, the parsley and the seasoning. Sprinkle sprinkle~ Your open face sandwich is ready. It's fast and it taste so good. It tastes like you're at a party! Ha!

Noodle Egg Salad with fresh chives / working with left overs


 I'm Craving Egg Salad but no bread to spread my egg salad on

No worries... I will just take the ingredients I have and make a noodle egg salad with it. That should still satisfy my craving for the taste of mayonnaise egg salad. 

I have plenty of chives on the patio, so I've chopped up plenty of that. In fact, it's been a full day of working with my chives. I spent much of my time watching the bees and butterfly's enjoying the pretty purple blooms. I had to take photos of the whole magical moment. I think I will save the shots for a future video. Giggle~ 

My brother gave me fresh eggs from his hens and fresh eggs always taste better, sadly he is getting rid of all his chickens he's had for a thousand years so no more fresh eggs for me. My oldest brother lives next door to me so I'm going to miss hearing those old roosters crowing each morning.

Now let's see what I have in my frig to work with. 

I have to say I'm not one who follows recipes. I mostly use what I've got and today is one of those days. Looks like I have mayonnaise, a tad bit of sour cream I need to use up, a 1/4 of cream cheese I need to use up and the bottom of the tub of yogurt I need to use up. I have plenty of boiled eggs now. I have plenty of chopped onions and chives. I have mustard but getting low. I have cayenne pepper I just picked off the vine so maybe I will chop up one of those. Oh there's what looks like 1/5 cup of grated cheddar cheese. I will get rid of that too. Wow, there's some capers! I forgot I had those! And... don't know what that is, better toss that out. And.... well no crackers or bread. But I do have noodles! Hummm... I think that's the making for a Noodle Egg Salad don't you? Wink~

Time to mix it up

Now all I have to do is cook up the noodles and mix it all together. I will let it rest for an hour or so to let the flavors mingle while I finish my chores and then I will be good and hungry for a simple lunch.


Making pasta salad is a great way to use up leftovers

It's really hard to mess up a noodle salad. It's almost fail safe. I like how most mayonnaise and cream base noodle salads can be eaten hot or cold just like a egg salad. Now this pasta salad has just as much boiled eggs in it as the pasta so the whole thing is a pretty yellow color with a few specks of red from the cayenne pepper and then the bright green color from the chives. It's pretty. 

But the best part is... using up all those left-over containers in the frig. "Yes" - The seasoning I used was simple. salt, pepper, garlic powder & a bit of celery flakes. I topped it with a bit of Avocado oil just because I love the stuff.
