Galentine's Day Parties
Ah, Valentine's Day. That day in February where we profess our love for someone. We send flowers, we give cards and gifts and it's a day where love blossoms for all to see. But what about other types of love? Shouldn't they be celebrated too? This is where Galentine's Day comes in, you know, you and your 'gals' celebrating Valentine's Day but with a twist.
Sometimes girls just want to get together and have a pretty party and what better day than Valentine's day to do just that? I mean, there is an abundance of flowers, everything is girly pink and red, it just screams party! These parties can run the gamut from informal to all out and can include games, photo booths, food machines, and the like. You can have a tea party with your closest girlfriends or a gala fit for royalty, it's all up to you.
We all love taking photos and if you're dressed up for a party, it's the perfect time to make some memories. By fashioning a heart out of flowers you can make yourself a pretty backdrop for those photos, or you can decorate a large frame with flowers, hearts, balloons and paint for another cute prop. Valentine's Day Scavenger Hunt
Celebrate this Valentine's Day by giving your sweetheart a extra special time and a Valentine's Day scavenger hunt. This is a fun way to let them know just how much your truly do love them. A Valentine's Day scavenger hunt can be as big or small as you wish, hosted in your home or somewhere else, and as over-the-top or as quiet as you want. Your sweetheart is sure to love all the attention; you'll earn big points, and maybe even a few kisses, for your efforts.
You'll want to think about a theme and final gift/clue and map out your Valentine's Day Scavenger Hunt around those. Your theme could be red and pink, your first date or romantic movies/songs. Depending on your budget and relationship length, the final gift could be a romantic home-cooked meal, dinner and drinks at an intimate restaurant, concert tickets or even a special piece of jewelry.
The length of time will be determined by how many clues you write. You'll want enough to make it feel like a game, but not so many that it takes too long and the mood is ruined. Five to seven clues will probably be enough. Craft stores sell patterned sheets of paper that you can use in your printer. Use a fancy font for the words for an extra romantic touch. Seal the clues in envelopes or small boxes with chocolates.

Heart Shaped Ice Cubes

I really like this idea because it's perfect for a group of people having a few Valentine's Day drinks or just as perfect for a private romantic dinner for two.
You can put the heart shaped ice in a ice bucket or simply have the heart shape ice already in individual glasses. Either way it works because the idea is for the drinker to see the hearts.
You can find heart shape ice cube molds at craft store and in the Valentine section of some supermarkets and retail stores like Wal-Mart. You can even find candy molds that will work for ice cubes as well. If you can't find them in stores just do a search at Amazon.com and you will find them for sure.

You can either freeze the cubes clear or add a bit of food coloring to the water. Or... add a bit of red fruit juice. You can even fill the molds 1/2 full of water and let it freeze then fill the remainder of the mold up with your choice of a red drink. I love the 1/2 and 1/2 effect myself.

- 6 ounces semisweet baking chocolate or white baking bars (white chocolate), chopped
- 2 tablespoons butter or margarine
- 1/4 cup whipping (heavy) cream
- 1 tablespoon shortening
- 1 cup (6 ounces) semisweet or milk chocolate chips or white baking chips
- Finely chopped nuts or candy decorations, if desired
1. Cover cookie sheet with aluminum foil. Melt baking chocolate in heavy 2-quart saucepan over low heat, stirring constantly; remove from heat. Stir in butter until melted; stir in whipping cream. Refrigerate 10 to 15 minutes, stirring frequently, just until thick enough to hold a shape.
2. Drop mixture by teaspoonfuls onto cookie sheet. Shape into balls. (If mixture is too sticky, refrigerate until firm enough to shape.) Freeze 30 minutes.
3. Heat shortening and chocolate chips over low heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat. Dip truffles, one at a time, into chocolate. Place on aluminum foil-covered cookie sheet. Immediately sprinkle some of the truffles with finely chopped nuts or decorating candies.
4. Refrigerate truffles about 10 minutes or until coating is set. Drizzle some of the truffles with mixture of 1/4 cup powdered sugar and 1/2 teaspoon milk. Refrigerate just until set. Serve at room temperature. Store in airtight container.

Stephen my hubby is a pro at making meringue desserts..., in fact he introduced me to the first pavlova I ever ate. It's part of the National cuisine of Australia & New Zealand so it's traditional for us to eat it during the holidays since my hubby is Australian.
Now the reason I brought that up is because... this pillsbury dessert reminds me of it. I can't think of anything better for Valentine's Day either. This recipe is going to be my pick for this years romantic meal for me and the hubby. Oh... I love the idea of a touch of cream cheese & white chocolate in it. 2 things that a pavlova doesn't have. Ohhhh yeahhh! Now that looks like Valentines :)

Valentine's Day Meringue Dessert Recipe

1. Heat oven to 275°F. Line cookie sheet with cooking parchment paper. In large bowl, beat egg whites and cream of tartar with electric mixer on medium speed until foamy. On high speed, beat in 1 tablespoon of the granulated sugar at a time until stiff glossy peaks form and sugar is almost dissolved, about 6 minutes. Spread meringue to form 10x10-inch heart shape on cookie sheet, building up edges with back of spoon.
2. Bake 45 to 50 minutes or until firm and dry to the touch. Turn oven off; let meringue shell stand in closed oven 1 hour. Slide meringue shell and parchment paper from cookie sheet onto wire rack. Cool completely, about 10 minutes.
3. Meanwhile, in medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. In large bowl, beat cream cheese and powdered sugar with mixer on medium speed until fluffy. Gradually beat in melted baking bar until smooth and creamy. Gently fold in whipped cream.
4. Carefully remove meringue shell from parchment paper; place shell on serving plate. Spread cream mixture evenly in shell. Cover; refrigerate at least 2 hours.
5. In medium bowl, gently mix pie filling and strawberries. Spoon 1 1/2 cups fruit mixture over top of dessert. Garnish with mint sprigs. Serve remaining fruit mixture to be spooned over individual servings.
High Altitude (3500-6500 ft):

What a Blessing it was to enjoy Mothers Cactus on Thanksgiving
I gave this cactus to my Mother on Valentines Day in 2010. Hence the reason it's red and white. Sadly, 10 months later we lost our Mother after a long 7 month battle in the hospital. Mothers beautiful cactus continues to live and bless us with it's beauty. For this Thanksgiving I placed the cactus right in the middle of my dinner table. I wanted to be able to look at it and be reminded of how blessed I am during this holiday season. Her beautiful cactus will never go without love.
For all you cactus lovers; if you have a cactus but don't know what kind it is, maybe this information will help. I took Horticulture many many years ago but didn't dare try to remember the spelling of these names so I went to the trusty Internet for help. Fun Facts about the cactus:
Schlumbergera is a genus of cactus from the coastal mountains of south-eastern Brazil. Plants grow on trees or rocks in habitats which are generally shady with high humidity and can be quite different in appearance from their dessert-dwelling cousins. Most species of Schlumbergera have stems which resemble leaf-like pads joined one to the other and flowers which appear from areoles at the joints and tips of the stems. Two species have cylindrical stems more similar to other cacti. In Brazil, the genus is referred to as Flor de Maio (May flower), reflecting the period in which they flower in the Southern Hemisphere.
This genus contains the popular house plants known by a variety of names including Christmas Cactus, Thanksgiving Cactus, Crab Cactus and Holiday Cactus, which are Schlumbergera cultivars, and flower in white, pink, yellow, orange, red or purple. (The Easter Cactus or Whitsun Cactus, which may also be called a Holiday Cactus and has vivid scarlet flowers in the most commonly grown form, is now placed in the genus Hatiora.) The cultivars of Schlumbergera fall into two main groups:
- The Truncata Group contains all cultivars with features derived mainly from the species S. truncata: stem segments with pointed teeth; flowers held more or less horizontally, usually above the horizontal, whose upper side is differently shaped from the lower side (zygomorphic); and pollen which is yellow. They generally flower earlier than members of the Buckleyi Group and although common names are not applied consistently may be distinguished as Thanksgiving Cactus, Crab Cactus or Claw Cactus.
- The Buckleyi Group contains all cultivars with at least some features clearly showing inheritance from S. russelliana: stem segments with rounded, more symmetical teeth; more or less symmetrical (regular) flowers which hang down, below the horizontal; and pollen which is pink. They generally flower later than members of the Truncata Group and are more likely to be called Christmas Cactus.
Common names
Plants are offered for sale under a variety of common names. The earliest English common name was "Christmas Cactus". In Europe, where plants are largely produced for sale in the period before Christmas, this remains the most widely used common name in many languages for cultivars of all groups (e.g. Weihnachtskaktus in German, Cactus de Noël in French, and Cacto de Navidad in Spanish). This is also the name used in Canada. In the United States, where plants are produced for the Thanksgiving holiday in November, the name "Thanksgiving Cactus" is used; "Christmas Cactus" may then be restricted to cultivars of the Buckleyi Group, particularly the very old cultivars such as 'Buckleyi'. The name "Crab Cactus" (referring to the clawed ends of the stems) is also used for the Truncata Group. "Link Cactus" is another common name, describing the way that the stems of the genus as a whole are made up of linked segments.
The Easter Cactus or Whitsun Cactus is now placed in the genus Hatiora, but was at one time included in Schlumbergera (or one of its synonyms). The name "Holiday Cactus" has been used to include both Schlumbergera and Hatiora cultivars.
