I remember Mothers Tomato Gravy on Buttermilk Biscuits

Growing up eating tomato gravy

Southern Homemade Biscuits and Tomato Gravy was a popular meal at our house growing up. In fact, it was one of my favorite meals.  I couldn't hardly wait for Daddy's tomatoes to get big and ripe so we could pick them from the vine for Mothers fresh tomato gravy.

Mother and Daddy would always "Can" lots of tomatoes along with other things from the garden; to hold us over for the winter. We would always have that fresh tomato taste for soups, stews, and swiss-steak; just to name a few. In the winter she would even open a jar of canned tomatoes to make us winter tomato gravy too!  Add a trickle of golden eagle syrup on top of the biscuits & tomato gravy and you're in heaven!

In the South we grew up on eating lots of fried foods such as fried chicken and fried pork chops, or foods in general that was cooked in a lot of lard or oil.  We also grew up on eating homemade biscuits with most of our meals because it is very common to sop your bread in all the grease and gravies the foods are cooked in.  A lot of finger licking goes on in the South!

These photos are from many years agocan also be found on youtube.com
and I am so glad that I still have them. It gives me great pleasure to introduce to you my Mother, the Home Cook featured in this cooking video. Watch as she makes homemade tomato gravy! This very kitchen is the kitchen we children grew up eating her delicious Southern food. I sure wish she was still with us. How much I do miss her.

What is Tomato Gravy?
  • Tomato Gravy is is a gravy made from canned tomatoes, diced vine tomatoes or canned stewed tomatoes; flour, usually a large amount of fat to a small amount of fat. This is a Southern U.S. dish.

  • Tomato gravy, which is distinct from the term as used by northeastern Italian Americans when referring to tomato sauce, is a gravy common in most rural areas where tomatoes were a staple food. Tomato gravy is prepared in a method similar to white gravy. The cooked tomatoes, some fat (usually cured pork fat) and flour are cooked together until thick, and seasoned with salt and pepper. Typically, tomato gravy is served over eggs, toast and biscuits.

My favorite Breakfast is a Barbecue Breakfast

A "Barbecue Breakfast" can refer to any meat cooked on the grill, sauced or not sauced - The most common meaning for a "barbecue breakfast" refers to pulled pork that's been grilled or smoked and served with BBQ sauce on top (or warmed inside the meat after it's been pulled). This meat is then served as part of a hearty breakfast.

What is a Barbecue Breakfast?

Barbecue for Breakfast?  Absolutely! In fact, it's common fair in the south, especially for a big hearty breakfast. Take a look at the photo above by cchapman /flicker.com. This is a perfect example of a hearty barbecue breakfast. Rich pulled pork fills the plate with sauce drizzled on top of the meat. What kind of sauce is that in the photo? It could be catchup, or it could be a type of barbecue sauce. Barbecue sauce is the traditional sauce for a BBQ Breakfast. Scrambled eggs and home fries (also called cottage fries) are on the plate as well. To the right of the plate is what?! Another plate! Yep, it's another plate of big fat fluffy biscuits and gravy. Can it get any better than this? I-don't-think-so!

Along with the wonderful items shown in the photo; grilled caramelized onions, cooked buttered mushrooms, grilled tomatoes (when in season), baked beans or pork-n-beans and even cheese grits are all common fair for a "Barbecue Breakfast" too.

Barbecue Breakfast is; the American south's comparison to the Full English / Full Irish Breakfast which is also known to include beans, mushroom and tomatoes.  Cheese flavored grits go great with a barbecue breakfast along with potato cheese casserole which is also a favorite in the north. The first choice for bread is Buttermilk biscuits, where toast may be preferred in the north

If you would like to see how homemade buttermilk biscuits are made "by hand" and not with a biscuit cutter or rolling pin, then watch this video of my Mother2nd film if 1st doesn't work making biscuits years ago / back in 2007. Everyone always asks me for this video link so I post it where I can. She will show you exactly how to make them!

We find that there are several favorites
when it comes to barbecue for breakfast.

  • Pork: The first pick for a barbecue breakfast is usually pork meat and it's usually smoked and pulled pork as well. Smoked pulled pork seems to flavor well with scrambled eggs or fried eggs and home fries. Smoked pulled pork is even a favorite in homemade buttermilk biscuits, eaten like a sandwich right along with a full breakfast. It can be eating with or without sauce. Pork chops are also a favorite grilled breakfast food.

  • Sausage: Running in second place is BBQ pork sausage. The sausage is best when grilled with special barbecue sauce until it has caramelized on the sausage. Any type of sausage is popular but pork tends to be the common ingredient in sausage anyway. Sausage can be eating with or without sauce but lightly sauced is usually the breakfast choice. Grilled caramelized onions are always cooked along side grilled sausage for breakfast. If the sausage heavily spiced, you may want to go light on the barbecue sauce or not at all. But, you musttt grill those sausages for that char flavor. Some home cooks like to score the sausage with little xxxx, or even slice the sausage in-two- so the sauce will stay on the sausage better. This is obviously a matter of choice because many cooks will tells you not to do that because to much of the taste will escape out of the sausage. Others say it's better to get rid of some of the fat anyway. Try it both ways and you decide.

  • Grilled Steak: You can't beat steak and eggs for breakfast and if you've never had grilled barbecued steak for breakfast then your in for a real treat! You can grill the meat with barbecue sauce until it caramelizes or without barbecue sauce but with a bit of butter on top. The egg of choice is fried eggs over medium but omelets or scrambled style tastes fantastic too! (see scrambled egg dishes) for great ideas.

  • Bologna: Even bologna is grilled! Yep, I said b-o-l-o-b-n-a!  You can buy bologna is long rolls where you can cut it any serving size you like. Bologna is usually cut steak slice style then cross cut with smaller cuts on the top so it hold in the barbecue sauce between the cuts as it grills. Flamed charred edges taste really good. Bologna can be cooked with or without sauce. Delishioussssss for breakfast!

  • Fish: The 4th barbecue breakfast favorite is barbecue fish!  Salt and peppered then basted with a mix of lemon, butter, touch of garlic and barbecue sauce, all mix up together and tossed on the grill. My Uncle Gerald loved to grill fish with barbecue sauce! Fried catfish is also a favorite for breakfast in the south. Old timers will always eat fish for breakfast only if they have fish gravy to go along with it. Now this is not the normal gravy that you think of. Fish gravy is actually cornmeal, salt, pepper and oil cooked together in a cast iron skillet until it is very very brown and gritty, just like a spread more than a gravy. Spread it on a biscuit eaten with a piece of fish and your in heaven. My gradmother loved to eat it that way and she passed on the aquired taste to me as well. Put some fried eggs on the side and I'm as happy as a pig in mud!

  • Ham is also a favorite all over the country -but it's never served with barbecue sauce on top.

To Sauce or Not to Sauce?

That's a matter of taste and a matter of which cooking method your use to actually. Any smoked meat taste great for breakfast and is popular all over the United States but not as prevalent as it is in the south. Meat served with sauce on top or meat cooked with sauce is not as popular but tends to be a favorite in the southern United States. Many people in the U.S. loves to eat catchup with their eggs and many many people love to shake hot pepper sauce on their eggs, hash browns and home fries. It only makes sense that barbecued sauced meat be added to the list of breakfast foods.

Note: A Hearty Barbecue Breakfast is served for a supper meal as well.

It's common for people in the South to eat breakfast for supper so it's not uncommon at all to eat BBQ with their "breakfast supper". It's also common for people in the north to put pulled BBQ pork over rice along with eggs and toast.

*Great choice for a BBQ Brunch too!

Closing Thoughts ~
If you've never pulled together a BBQ breakfast before I wish you would try it for one of your next holiday get-togethers.

You might just like it. "Live Everyday like a Holiday". Pam

Second Breakfast is a Meal eaten after breakfast, but before lunch

What is Second Breakfast?

"Second breakfast (or Zweites Frühstück, Drugie śniadanie) is a meal eaten after breakfast, but before lunch. It is traditional in Bavaria, and in Poland. In Bavaria
(Bavarian Breakfast) or Poland, special dishes are made exclusively to be eaten during second breakfast. In Vienna, Austria the Second Breakfast is referred to as Jause. It is typical to eat four to five meals a day in these locations."

"The second breakfast is typically a lighter meal or snack eaten around 10:30 in the morning. It consists of coffee, pastries such as monkey bread (sticky bun recipe) and the like, or some sausages. The typical sausage is a white sausage (pictured above), Weißwurst, which is considered the specialty of Munich. The sausage is prepared during the early morning to serve during the second breakfast. It is served with pretzels, sweet mustard, and wheat beer. The meal is roughly similar in concept to the British elevenses, though elevenses is little more than a colloquial term for a mid morning snack. In Poland second breakfast usually consists of some snacks like sandwiches, or pastries, but may consist of light dessert type dishes like chocolate pudding or kisiel."

Monkey bread is also called Hungarian coffee cake, golden crown, pinch-me cake and bubbleloaf, is a sticky, gooey pastry served as a breakfast treat.

In J. R. R. Tolkien's book The Hobbit,

the hero, Bilbo Baggins, eats a second breakfast. In the preface to The Lord of the Rings, Tolkien mentions that Hobbits prefer to eat seven meals a day. In the film adaptation of The Fellowship of the Ring one of the hobbits, Pippin, references second breakfast in a line of dialogue.

In Thomas Mann's book The Magic Mountain, frequent and detailed references are made to second breakfasts. Beer is served along with "cold cuts on toast". Sometimes food from the first breakfast appears again such as oatmeal and fruit.

Poland

The traditional Polish breakfast is a large spread with a variety of sides eaten with bread or toast. Sides include various cold cuts, meat spreads, the Polish sausage kielbasa, tomatoes, Swiss cheese, and sliced pickles. Twaróg, a Polish cheese, is the breakfast classic and comes in many forms. Twaróg can be eaten plain, with salt, sugar, or honey, or it can be mixed with or chives into a cream cheese-like spread. Eggs are served often as the main breakfast item, mostly soft-boiled or scrambled. For a quick winter breakfast, hot oatmeal, to which cocoa is sometimes added, is often served. Jam spreads are popular for a quick breakfast, including plum, raspberry, and black or red currant spreads. Breakfast drinks include coffee, milk (some areas may serve fresh milk from the cow), hot cocoa, or tea. Traditionally, the Poles avoid heavy-cooked foods for breakfast. For the most part, one will not see fried meats or potatoes in a classic Polish breakfast. Emphasis is placed on a large variety of foods to satisfy everyone at the breakfast table. wikipedia

Germany

The typical German breakfast consists of bread rolls, butter, jam, ham, soft-boiled eggs and coffee. Cereals have become popular, and regional variation is significant — cheeses, cold cuts, meat spreads, yogurt, granola and fruit (fresh or stewed) may appear, as well as eggs cooked to order (usually at smaller hotels or bed-and-breakfasts). A second breakfast is traditional in parts of Germany, notably Bavaria (there also called Brotzeit, literally "bread time").

My Closing thoughts ~

I'm a fan of the Hobbit and Lord of the Rings for sure and second breakfast is something I celebrate and eat often. Now at the time I didn't know it was a real thing of course. Nope I ate second breakfast because I needed a little snack between breakfast and lunch. And it was always some type of sausage link with mustard and bread. I was delighted when I first heard that it was a real thing. I didn't feel guilty eating it anymore. Yeah! "Live everyday like a Holiday". Pam

My All Time Favorite Breakfast / Tomato Gravy and homemade Biscuits

I found this picture in my picture files of my Mothers breakfast table.

This picture is from years ago. When I saw it, I became so excited that I still had a picture of my favorite breakfast that my Mother always cooked for me. "Homemade Tomato Gravy and Homemade Buttermilk Biscuits". Now she was a fantastic cook and all her meals were delicious but I had a great love for tomato gravy and her beautiful fluffy biscuits. I always liked how she turned them up side down on the plate when she flipped them out too.

Then it hit me.

This was also the last picture I ever made of a meal my Mother cooked. It was the last breakfast of my favorite meal she cooked before she died. When I found it, it made me smile and cry at the same time. My favorite breakfast cooked by my Mother. If only I could taste it again and watch her make the biscuits.

❤  I have an old video of her making tomato gravy if you would like to watch it.

Memories....

This is what a traditional Full English Breakfast looks like / Fry it up!

I'm not English but I sure love a Full English Breakfast and for those people who don't know what it is, I wanted to share this great picture video that shows a wonderful example of a Full English Breakfast. And for those people who are calendar keepers... you may want to mark your calendar for September because it's Better Breakfast Month and February is Hot Breakfast Month. 2 great reasons to eat a great breakfast in celebration of these holiday observances.

Now today I wanted to talk about the traditional Full English Breakfast. Truth is, this breakfast is just about all fried and I don't really know how healthy this breakfast is but I sure love it. LOL.... anyway we are encouraged to eat breakfast and not skip breakfast.

When you look at the definition of Full English Breakfast... it says it's a breakfast that includes bacon, eggs, fried mushrooms, grilled tomatoes, sausage, baked beans, fried bread or buttered toast. Black pudding and bubble and squeak are also often included. Now I've never ate black pudding before but I love all the rest. What about you?

I also found in my research that it's also called a "Fry up" or Full Monty and it's mostly popular in United Kingdom and Ireland. What do you think guys is that correct?

Now I also read "Breakfast cereal often precedes the dish, and the meal typically concludes with buttered toast spread with marmalade, honey or other conserves."

Wow! I don't know if I could fit in a bowl of cereal  and toast after that big fried meal. But, I know it would be good.

That's what I have to share with you today. I hope everyone finds the time to enjoy a wonderful breakfast this month. Thank you to everyone who took the time to read my post. "Live everyday like a holiday" ~ love to you all, Pam

Better Breakfast with Protein Rich Eggs

Not all breakfasts are created equal when it comes to protein. One egg provides 13 essential vitamins and minerals, high-quality protein, antioxidants and boasts only 70 calories. Research shows that 25-30 grams of high-quality protein per meal maybe optimal to maintain healthy muscles and bones for adults. Source: http://www.e...raphic.pdf

Eggs Benedict is the Breakfast for me!

Ok what your looking at is a plate of Eggs Benedict-

Eggs Benedict is an American breakfast dish that consists of two halves of an English muffin, topped with ham or baconpoached eggs, and Hollandaise sauce. I'm blogging about eggs Benedict today because every April 16th is National Eggs Benedict Day. This is one breakfast that hits my taste buds to a T. I love a poached egg because I like the yellow of my eggs runny and I could eat Hollandaise sauce by the spoonfuls. I can just taste that emulsion of egg yolk and melted butter with a touch of cayenne pepper right now. ha ha ha- I even like to squeeze a bit of lemon on top.

My favorite restaurant for Eggs Benedict is..........

(drum roll please.....) The Cheesecake Factory. What? You didn't know the Cheesecake Factory had Eggs Benedict? Well they do. In fact they have a lovely brunch menu on Sunday mornings and Eggs Benedict is always what I order. I know I shouldn't but I always order extra sauce. It's a good thing we only go for breakfast there once a month. We would go more often if we lived closer to the restaurant but .... woe is me it takes an hour and 15 minutes to get there.

Do you make your own Hollandaise Sauce?

I try and make it off and on but I'm not real good at it. I can never get it as smooth as I want it to be. I love it pored over baked vegetables along-side a grilled steak. Hummm I wonder what else it's good on?

Mark your calendar, Holidays to remember-

We Started Hot Breakfast Month with a Hot Breakfast

Perfect for National Hot Breakfast Month!

It's foggy and rainy outside so I wanted to enjoy a hot breakfast that wasn't as heavy as biscuits-n-gravy. I decided to go with a breakfast souffle or maybe you call it a casserole, quiche or keish. Which-ever you want to call it. As you can see I make it thick, thick, thick! So thick that it reaches the top of my baking dish every time I make it. I don't know.... the traditional thin stuff doesn't cut it for me. Lol! I need it thick and fluffy if it's going to satisfy me.

Today I made it with crab meat, mushrooms, onions and 3 cheeses. I don't really follow a recipe. I just use what ever I've got in the frig and run with it. I start out with 7, 8 or 9 eggs (depends on what I have) - about a cup of heavy cream - at least a cup of meat & veggies (today I used about a cup of mushrooms & a cup of crab meat) - a bit of green onions (2) or chopped white onions - cream cheese chunks if I have it and tons of cheese! I bet it's about 2 cups. One cup in the mix and 1 cup of grated on top of the dish at the last 10 minutes of baking.

Pack it for a light lunch:
My Hubby loves it packed in his lunch and can eat it for breakfast, dinner or supper. Now I can't do that. If it's full of eggs I would rather just eat it for breakfast or brunch but Stephen lovesss keish packed in his lunch. When I make it I only want to eat it fresh out of the over but the hubby can eat it hot or cold. He has me freeze the left-overs in to-go containers so he can put in his lunch box.

February is National Hot Breakfast Month:
I was doing some reading about this observance and found an article on squidoo.com that says...
"The history of celebrating Breakfast in the month of February was actually created by the Jimmy Dean Foods division of the Sara Lee Corporation. Jimmy Dean Foods is known for producing heat-and-serve breakfast dishes (most notably with Jimmy Dean Brand Sausage) and found that over 60% of Americans eat cold cereal or another non-hot breakfast each day. This is why they started a month-long holiday to promote interest in hot breakfast options."  They have a list of breakfast recipes too.

Here's a Pillsbury quiche recipe that I posted in December.

January 2: Happy Groundhog Day!
I understand the groundhog saw his shadow so I guess it's 6 more weeks of Winter weather.

Pancake Cookie Cutters

It's Day 5 and this is the 5th post in celebration for National Cookie Cutter Week.

I ate a lot of pancakes when I was a kid and my Mother enjoyed drawing pictures with the pancake batter but never did she make pancakes with cookie cutters. Yes she made me many kitty cats and bunnies and when Daddy did the cooking he made snakes and frogs. LOL! Go figure -

Serve a fun breakfast to the kids
There's not a kid anywhere who wouldn't want to have a cookie cutter pancake breakfast. For Christmas you could make holiday pancakes like the picture to the left shows. For Valentines Day you could make heart pancakes. To celebrate a good report card you could make A+ pancakes. For that football player in your family you could make football pancakes.

Lunch Box
I think any kid would enjoy the different shapes that are available for eating and the best part is the ideas go on and on. If breakfast is not for you; you could always surprise the kids with a fun treat in their lunch box. Don't forget to pack the maple syrup for dipping.

Now let's talk about Breakfast in bed
Breakfast in bed? Yes! Even adults like to be pampered with cookie cutter pancakes. giggle~ Add a few sausage links and you better half will be happy for the rest of the day.

Finger Food
Mini cookie cutter pancakes are perfect for parties too. Yep! Add a plate of shapes that go with the theme of your party and provide a bowl of dip to dip them in. It could be syrups or a thinned down cream cheese dip. Sprinkle them with powdered sugar and you have a sweet party treat.

Cinnamon French Toast Bake Recipe

November 28  is National French Toast Day so I wanted to find a recipe that celebrated this food holiday but not with a traditional french toast recipe. This year I've picked cinnamon french toast bake. Pillsbury says "This easy breakfast bake features refrigerated cinnamon rolls that make quick work of favorite French toast flavors." Soundsss good to me!

Southern People Eat BBQ for Breakfast!

BBQ for Breakfast? Your kidding right?

Nope I'm not.  :) It's no secret that southern people eat barbecue for breakfast all the time. It tastes wonderful with eggs and buttermilk biscuits, I kid you not.

This photo by CC Chapman / flickr is a picture of a restaurant meal but is a prime example of how southerners are known to eat a BBQ breakfast at home. The star of the show is the meat and although we eat all kinds of meat, the most popular pick is "pulled pork." Pulled pork is happily plopped on top of eggs with lots-ah barbecue sauce for many-ah-meal.

Look at this smoked pork loan roast.
Now wouldn't you love to sink your teeth into that for breakfast? Pic description: "I smoked this roast in the new smoker for about 2 1/2 hours. I had opened it up before starting to cook and put a few green onions in along with some garlic and olive oil. I tied it back together with butchers twine then covered it with a rub of salt, black pepper, and cayenne pepper.

When southerners grill out
When southerners grill out, say the day before; if there's any meat left at all... you can bet your bottom dollar that that barbecue meat is gonna hit the table the next morning. No freezing or giving that meat away at all. Nope it's saved for breakfast the next morning. Some like it with no sauce at all while others like me have to have sauce. I actually prefer the sauce cooked on the meat so it caramelizes and chars. Yummm don't that sound good. Either way.... I slice open a homemade buttermilk biscuit, slather it down with white butter and pile in the meat. Talk about hog heave!

Yeah I know what your gonna say... You thought we ate fried chicken every day for breakfast. Maybe you were thinking about the newest craze of chicken-N-waffles. Nope we do give the chicken a break sometimes ya know. We eat barbecue meat too. giggle~

Fun Food Facts:
According to estimates, prior to the American Civil War Southerners ate around five pound of pork for every one pound of beef they consumed.
In hard times of the past, wild hog hunts were popular. Pig slaughtering became a time for celebration, and the neighborhood would be invited to share in the largesses. These feasts are sometimes called 'pig-pickin's. The traditional Southern barbecue grew out of these gatherings." wiki

French Toast Recipe

This post is in honor of National Breakfast Month.
A food holiday celebrated the month of September.

In honor of September being "breakfast month" I thought I would take a picture of a dish of french toast that I ate for supper the other night and blog a bit about it. Yes I know Breakfast Month is about eating a good breakfast at the start of your day but I actually enjoy breakfast for supper so french toast it was.

The recipe was just the easy version. No bells or whistles; just plain old fashion french toast fried in a cast iron skillet and covered with lots-ah-golden eagle syrup. ....With my trusty kitty cat cup in hand (my favorite coffee cup) and full of coffee, It was a match made in heaven. I devoured it all while watching the cooking channel.

Ingredients

  • 1 egg
  • 3/4 cup milk
  • 1 tablespoon ground cinnamon (I used 1/4 teaspoon)
  • 1 teaspoon vanilla
  • 1 pinch salt
  • 2 slices of white bread

It's Cream Filled Doughnut Day!

I love cream filled doughnuts!
Oh yesss! Give me deep fried doughnuts that are vanilla creamed filled. (I'll take chocolate too) In fact I can honestly say I eat them every chance I get... yes I admit it... I eat them once every week and today was no different. In fact I felt especially content to ride my bike to the doughnut shop down the road to celebrate National Cream Filled Doughnut Day. Yep I sure did. And in honor of this special day I ate 3! Ohhh yes I did! That's the downfall of living a bicycle ride from a doughnut shop. But at least the bike ride ate up a few calories. That's what I told myself when I bit into the 3rd one.  :)

Happy National Cream Filled Doughnut Day everyone!
