Carrot Cake for all holidays


 Hello everyone! Pam here ~

If there's any cake that makes me think of the Fall Season it has to be the carrot cake. I don't know if it's because I pick carrots from the garden in Fall or if it's because of the spices in the cake that makes me think of Fall... but either way... I always want a carrot cake in the Fall Season.

Now when I was growing up, 

my Mother always made carrot cake at Christmas Time. She never missed baking one. I still remember watching her grate up carrots and smelling the spices as she swirled them in the batter. I always looked forward to the carrot cake as much as I looked forward to the Red Velvet cake.

Now that I'm thinking about it... 

she would sometimes bake one for Easter too. Seems any recipe that had carrots in it would be on the dinner table. LOL.  I think it was because as a kid, I insisted that we had plenty of carrots just incase the Easter Bunny stopped by to say hello. LOL... she would always buy lots of carrots and then she would have to find ways to use them up. Hence the reason we ate carrot cake at Easter. And carrot salad.... and copper pennies.... and roasted carrots. ha ha ha !  I love this memory.

Now unlike the video above... 

my Mother would put tons of creamy frosting on all sides of the cake and thick in-between the layers. She would fill it full of nuts too. Now my favorite nut used in carrot cake is walnuts but because we had pecan trees in the yard my Mother used pecans in the cake most of the time. It was an extra treat for me when she added walnuts. Yummy!

In Closing ~

So for me, I think carrot cake is perfect for all seasons and all holidays. ~wink!  Autumn Season, Winter Season or Spring Season.

Now I know most of us only eat the carrot cake at Christmas time but this beautiful cake has a celebration day all of it's own. That means.... we have an excuse to eat this fancy cake again! That's right! It's celebration time! Below you will learn a few fun fact's about the carrot cake and yummy ways to enjoy this food holiday.   • Learn what a carrot cake is: Yep carrot cake is a cake with grated carrots mixed in the batter. It's that simple. Sounds weird but carrots are sweet and makes a perfect cake. The little orange flakes of carrot makes a beautiful batter too.
  • Learn a bit of Carrot Cake History:  Impress your friends with what you know~   Many food historians believe carrot cake originated from Medieval carrot puddings eaten by Europeans. This evolution is said to be originated during the Middle Ages when sugar and sweeteners were expensive for most individual and often hard to find, so many people used carrots as a substitute for sugar.
  • Recipes for carrot cake occur as early as 1827, in a French cookbook published in England. Another 19th-century recipe comes from the housekeeping school of Kaiseraugst (Canton of Aargau, Switzerland)  According to the Culinary Heritage of Switzerland, it is one of the most popular cakes in Switzerland, especially for the birthdays of children.

  • Host a Party to celebrate this holiday! Bake that beautiful carrot cake... set that beautiful table setting and enjoy a refined cake and tea party! Take a few tips from the photo to the right. See how beautiful the white dishes look? Well just think how beautiful a cake with grated orange carrots in it would look against white dishes. Just beautiful!
  • Host a simple Cake & Coffee Night: This doesn't have to be fancy at all. A simple pot of coffee and a delicious home made carrot cake is all it takes to make your family and friends smile. Who can resist a piece of carrot cake when it's not even Christmas?? Nobodyyyy!
  • Invite your guest the quick way: 123Greetings has a nice list of free internet invitations you can send too.
  • Always give away a door prize at your party or get together. An easy box of carrot cake mix from the grocery store would work. Yep that ole saying "Box with a Bow" will work just fine for a simple cake party. Or... be more creative and bring out all the bells and whistles with a gift box of baking making goodies. Even a mixing bowl and wooden spoon would be fun.
  • Do you have lots of time on your hands? Grate grate grate! Surprise your friends with jar after jar of grated up carrots for them to take home when they leave. That way they can make their own carrot cake at home. Just remember to pore sweet sugar water over the top before you seal the jar so the carrots don't dry out. Have them refrigerate when they get home.

  • Take To Work: Bake a carrot cake and take to work to share with your work mates. If your a boss.... stop by the bakery and purchase a cake for all the employees to share in the break room. 
  • Learn how to make a carrot cake: There are many many recipes on the Internet for different versions of carrot cake.
  • Learn how to make Cream Cheese Frosting: My favorite one is so easy to remember..... 2 cups confectioners sugar, 2 blocks cream cheese, 2 sticks of unsalted butter, vanilla flavoring. Just remember 222... and mix mix mix -ha!
  • Choose your Nut: Carrot cakes are usually made with black walnuts but I've had ate them with pecans too. Many recipes add plumped raisins in them but not all. I've even ate carrot cake with coconut in it and it was delicious!!! but not a common ingredient.
  • Be a good neighbor: Wrap up a few slices of cake and deliver to your neighbor. They would love it. Especially if they couldn't make it to the cake party that you had
  • Do you know of someone who has been feeling down? Make up a cute little gift basket and deliver to them.
  • Read: Do a google search and read read read. I found some really fun facts about cakes in other parts of the world.
  • Get on the Internet and learn how other people celebrate this holiday. You are sure to find some more ideas that you love and maybe you can share them with me!.
