Grilled Margarita Shrimp

Grilled Margarita Shrimp for Two Recipe
Everybodys going to be drinking Margaritas on February 22 in honor of National Margarita Day but for those of you looking for a meal to add to those yummie drinks then here's a Margarita recipe for you.


Let's talk about it:
I'm a fan of Margaritas and cant pass up a drink when I go to my favorite Mexican restaurant. They have 2 for 1 specials all the time. giggle~ I do keep the mix at home for sunny days at the beach so when I ran across this recipe I knew I would have everything I needed to make it.  All I need now is a warmer day, a clean grill and I'm good to go. Lol. 


Really tho, I am looking forward to trying this recipe in spring. I know I can make it inside for me and the hubby but if it's as good as I think it will be then I'll add it to my"Wanna-serve" list when I host my first garden party in Spring. Since I love Margaritas I'll love grilled shrimp with a Margarita flavor. Thank you Pillsbury.


Grilled Margarita Shrimp for Two Recipe


INGREDIENTS
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon minced garlic
  • 1/4 cup margarita mix (from 33.8-oz. bottle)
  • 2 tablespoons tequila
  • 12 shelled deveined uncooked large shrimp with tails left on


DIRECTIONS
1. Soak 4 bamboo skewers in water for 30 minutes. In 1-quart resealable food storage plastic bag, combine cilantro, garlic, margarita mix and tequila. Add shrimp; seal bag and shake to coat. Refrigerate 30 minutes to marinate.

2. Meanwhile, heat grill.

3. When ready to grill, thread shrimp on skewers; discard marinade. Place shrimp on gas grill over medium heat or on charcoal grill 4 to 6 inches over medium coals. Cook 5 to 7 minutes or until shrimp turn pink, turning several times.

Pinwheel Pepperoni Trees Recipe

INGREDIENTS:

2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls
1 teaspoon dried oregano leaves or Italian seasoning
2 pieces (2x2 inches each) yellow bell pepper
1 can (8 oz) pizza sauce
1/2 cup chopped pepperoni
1 cup finely shredded mozzarella cheese (4 oz)
1/4 cup chopped plum (Roma) tomato (about 1 small)
2 tablespoons chopped green onions (2 medium)

DIRECTIONS:

1. Heat oven to 375°F. Spray large cookie sheet with cooking spray. Separate dough into 8 rectangles; firmly press perforations to seal. Sprinkle about 1/8 teaspoon oregano over each rectangle. Starting with 1 short side, carefully roll up each rectangle. Cut each roll into 6 crosswise slices, making a total of 48 slices.

2. Form 2 trees on cookie sheet using 24 slices each. For first tree, place 1 slice for top on 1 side of cookie sheet. Arrange 2 slices below top, sides almost touching. Continue arranging rows of 3 slices, 4 slices, and continuing until last row is 6 slices across. Center 3 slices below tree for trunk.

3. Repeat for second tree, assembling in opposite direction on cookie sheet to fit next to first tree. Bake 14 to 18 minutes or until light golden brown. Meanwhile, with small cookie cutter or sharp knife, cut two 1 to 1 1/2-inch star shapes from bell pepper. Set aside.

4. Remove partially baked trees from oven. Spread 2 tablespoons of the pizza sauce evenly over each tree to within 1/2 inch of edges, leaving trunk uncovered. Sprinkle 1/4 cup chopped pepperoni evenly over sauce on each tree. Sprinkle each with 1/2 cup cheese.

5. Return to oven; bake 3 to 5 minutes longer or until cheese is melted. Meanwhile, heat remaining 3/4 cup pizza sauce in small saucepan until hot.

6. Remove trees from oven. Sprinkle each tree with 2 tablespoons tomato and 1 tablespoon onions. Place bell pepper stars on tops of trees. Cool trees on cookie sheet 2 to 3 minutes. Carefully slide trees onto serving platters, trays or cutting boards. Serve warm with warm pizza sauce for dipping.

Celebration Food: National Fig Week is always celebrated November 1 -7. During this week we are encouraged to celebrate the fig by enjoying great fig recipes. To help you do that, I've picked out a Betty Crocker recipe that's perfect for fig week and Thanksgiving too.

Fig and Blue Cheese Appetizer Tarts Recipe

INGREDIENTS:

  • 3 oz 1/3-less-fat cream cheese (Neufchâtel; from 8-oz package), softened
  • 2/3 cup crumbled blue cheese (3 oz)
  • 1/4 cup Smucker’s Sweet Orange Marmalade
  • 2 tablespoons balsamic vinegar
  • 16 dried Mission figs, coarsely chopped (1 cup)
  • 1 can (12 oz) Pillsbury Big & Flaky refrigerated crescent dinner rolls
  • 1/2 cup Fisher Chef’s Naturals Chopped Pecans

DIRECTIONS:

1. Heat oven to 350°F. In small bowl, mix cream cheese and blue cheese with fork until well blended; set aside.

2. In 1-quart saucepan, stir marmalade and vinegar over low heat until mixed; stir in figs. Cook over low heat 5 to 7 minutes, stirring occasionally, until figs are softened. Remove from heat.

3. Remove crescent dough from package, but do not unroll. Cut roll of dough into 16 slices. On 2 ungreased cookie sheets, place slices 2 inches apart. Press center of each slice to make indentation, 1 1/2 inches in diameter.

4. Place 1 heaping teaspoon cheese mixture into each well. Top cheese with about 1 tablespoon fig mixture and 1 1/2 teaspoon pecans.

5. Bake 15 to 19 minutes or golden brown. Remove from cookie sheets to cooling rack; cool 10 minutes. Serve warm.
