The Picture Post I have for you today is Biscuits and Chocolate Bacon Gravy
Gravy made with bacon, cocoa, and milk, served over buttermilk biscuits from Zingermans Bacon Brunch. Now I don't know how many of my readers make this delicious treat at home but if you don't I suggest that you try it ok. In one of my earlier posts about "gravies" I explained that Chocolate gravy is a variety of gravy made with fat, flour, cocoa powder, and varying amounts of sugar. This variety is more common in cuisine of the Southern United States and is most often served as a Sunday morning dish with fresh biscuits in the Ozark and Appalachian Mountain regions and Alabama. It is also commonly served on Christmas morning.
Milk is commonly used as the liquid in chocolate gravy
while some recipes use water. Some recipes devised in eastern Oklahoma use more sugar, and the fat comes from the use of butter after the gravy is complete, making it more like warm chocolate pudding served over biscuits. In a traditional gravy, a roux is made with fat and flour before the milk is added; in chocolate gravy all the dry ingredients are mixed first, milk slowly incorporated, then stirred continuously until cooked. When a thick and rich consistency is achieved, the butter and vanilla are added. Other ingredients, such as crumbled bacon, are usually added afterward near the end of preparation.
Closing Thoughts ~
This really is a treat to have for a leisure Sunday morning breakfast. I remember my mother putting an extra dab of butter on the biscuit right before she poured on the chocolate. Then she would sprinkle with sugar as if it needed it. LOL! Now my mother always cooked the bacon strips and served it on the side of the biscuit but now-ah-days they crumble the bacon up and sprinkle it on top of the chocolate.
I've also ate it with peppermint shaving on top of the chocolate instead of bacon. That was my breakfast for Christmas Eve last year. Ha! I also remember my mother would make this chocolate gravy and pore over cake too. I have filled egg crapes with it before and that turned out good.
