 Peanut Butter Pumpkin Soup


4 tablespoons unsalted butter
4 cups pumpkin pie filling
2 cups pureed sweet potatoes
1 cup peanut butter
6 cups chicken or turkey broth
1 teaspoon freshly ground black pepper
1 teaspoon salt
chopped chives for garnish
sour cream for garnish

Melt butter in a soup pot over medium heat. Stir in
pie filling, sweet potatoes and peanut butter. Add
broth, pepper and salt; stir well until smooth. Reduce
heat and simmer for 20 minutes. To serve, garnish soup
with chives and sour cream. Serves 8.

Sour Cherry Soup

Sour cherry soup is a slightly sweet soup made with sour cream, sugar and whole fresh sour cherries, and served chilled. Originating in Hungarian cuisine, this soup is a summer delicacy in several European cuisines. 

The dish has been adopted by the Austrians, Poles, Slovaks, and Germans. Hungarian-Americans and Hungarian-Canadians brought the soup to North America.

In Hungarian cuisine, sour cherry soup or meggyleves is a soup made from the fruits of the sour cherry tree (Prunus cerasus), and not from sweet cherries. The name is formed from meggy meaning 'sour-cherries', and leves meaning 'soup'. It is traditionally served as a dinner course, usually as either the appetizer, soup or dessert, on warm summer nights or for hot summer luncheons. The soup is cooked with whole sour cherries, including the pits. Sour cherry trees are numerous in Hungary, and the soup is a good example of the quintessentially Hungarian fusion of Eastern/Asian influences and traditional Continental European cuisine. It is customary that the soup contain fresh sour cherries, fresh cream and sometimes cloves and cinnamon. Canned regular cherries are sometimes added and sour cream is often substituted for fresh cream. A small amount of sweet white or dry red wine is also sometimes added before serving. Packets of dried meggyleves powder are also sold in Hungary.

February 4 / National Homemade Soup Day / United States 

I listened to it rain all night last night.  As I laid there listening... I was thinking about how nice it would be to have a warm bowl of soup. As I tossed the idea around I reached for my laptop and started surfing the Internet looking for pictures of different types of soup. Keeping in the back of my mind that February 4 was National Homemade Soup Day. So my taste buds settled on a simple tomato soup picture that I thought I would share. I think for today... I'm going to make this soup so let's talk about it.

The type of soup in the photo is Garlic Tomato Soup. 
I love tomato soup and I eat it a lot in the winter time but not very often do I fix garlic tomato soup. But today I'm going to do just that. Here's the notes for cooking.

Garlic-tomato Soup
Heat a couple tablespoons of olive oil in a soup pot. Add 3-4 cloves minced garlic and sautee gently. Add a teaspoon of paprika and wait for it to sizzle; pull off heat IMMEDIATELY so the paprika doesn't scorch. Add a 15-oz. can of crushed tomatoes and 15 oz. of broth. Return to heat and slowly bring to a simmer. Add a dash of hot sauce, optional. When hot through, adjust seasonings with salt and pepper to taste and serve with something really cheesy.

Yep it's a grill cheese sandwich yall. And I can't think of anything better to eat with a bowl of tomato soup either. I usually sprinkle grated cheese on top of my tomato soup but if I have a grill cheese sandwich to dip in the soup; I don't have to do that. And oh my gosh.... 3 different cheeses! Wow! If you look at the picture you can see the colored cheese layers.

Now the bread is being called Jesus Bread
When I think of Jesus I think of flat bread but it's not flat bread in the photo. so I'm guessing it's what they call sprouted bread. Like the Ezekiel Bread in the bible??. Let's talk about it.

Well there ya go! My Garlic Tomato Soup is simmering on the stove and that's a real fact. I did it just like the directions above. I'm going to grill myself a cheese sandwich on regular white bread. I looked into what it would take to bake Ezekiel Bread but there's a lot of ingredients in that bread and I don't have what it takes to get the job done. I think I will post the recipe for everyone in another post though.

Fun with Butternut Squash Pear Bisque and Fish Crackers

Fun With Food! Yes! Last night I was surfing around pinterest looking for some food fun that would be perfect for a cold rainy night and I found this photo of Butternut Squash and Pear Bisque. Along with the recipe for both the bisque and the fish crackers.


Now I was thinking... this would be a fantastic idea for little girls learning to cook in the kitchen. I have 4 great nieces that would just love making this.

My family spends lots of time on the river so these cute little fish crackers would make a lot of familiar fish giggles for sure.

I think having kids involved... in the making of something like crackers for soup would be a fun way to get them to eat some healthy soup. I even like the idea of the soup/bisque in the coffee mugs too. I think this is the best idea yet for little hands being able to grip and hold. Ohhh and the fish cracker on the end of a cane pole! Just genius! When I invite the girls over I'm going to say... "Come on girls lets go fishing in the mud hole!"

 Not only would the kids learn to cook but they would have a wonderful food craft day too. I mean who could resist a day of cutting out crackers with fish cookie cutters? Then drawing the fish faces and fish scales on. :)

The idea of sharing this little project with the girls sounds like something right in the middle of my river bed too! Gosh even the boys would like this food project. I can just see the kids now. A day of soup making and cracker crunching sounds like a fine way to enjoy a cold rainy night to me.

Fish crackers would be a fun food gifts too. Dads would love it! Fishermen would love it! And what a fun idea to take to someone sick in bed. Chicken Soup and Grands!® Dumplings



Chicken Soup for the Soul Day was created by Chicken Soup for the Soul Enterprises, Inc. "Chicken Soup for the Soul is a series of books, usually featuring a collection of short, inspirational stories and motivational essays."  

Quite obviously, this day was created for commercial reasons. In honor of November 12 being Chicken Soup for the Soup Day we've decided to list a chicken soup & dumpling recipe by pillsbury. Remember for Soup Month too.  :)

Chicken Soup and Grands!® Dumplings

INGREDIENTS
3 cans (19 oz each) Progresso® Traditional chicken noodle soup
1 3/4 cups Progresso® chicken broth (from 32-oz carton)
1 can (16.3 oz) Pillsbury® Grands!® refrigerated buttermilk biscuits
1 egg, beaten
Chopped fresh parsley, if desired


DIRECTIONS
1. In 4-quart Dutch oven, combine soup and broth. Bring to a boil.
2. Meanwhile, separate dough into 8 biscuits; cut each in half.
3. Dip biscuit halves in egg, coating all sides; drop into boiling soup. Cook, uncovered, 10 minutes. (Soup must be at a medium boil.) Cover; cook an additional 10 minutes or until dumplings are light and fluffy.
4. To serve, carefully remove dumplings from soup. Ladle soup into bowls. Top each with dumplings. Sprinkle with parsley.

National Split Pea Soup Week

The 2nd week in November is National Split Pea Soup week! The great split pea soup photo is by Ruthieki from flickr with recipe.


I know many people love this soup but I didn't grow up eating this soup at all. I know your not going to believe this but I ate this soup for the first time when I was about 40 years old. I found a bag of split peas at the grocery store that had a split pea recipe on the back. Well...... I followed the recipe which seemed pretty plain. It was mainly just peas, dried onions and chicken stock. I let it simmer for about 4 hours and it was ready. I thought to myself... hummm, so this is split pea soup?? The greyish green color was a turn off for me and I have to say the taste of my soup was not much better. hahaha! I later found many other split pea recipes that were a lot more colorful and full of other tasty ingredients like carrots, potatoes, onions, celery etc. Now that's more like it!!
