Let it Lump Buttermilk Pancakes with Recipe

Over mixing is a Major Mistake! Let it Lump for the Best Batter it takes!

Oh yessss.... a rhyme to remember! "Over mixing is a major mistake! Let it lump for the best batter it takes!"....giggle~ In this post I'm going to talk about pancake batter. The best pancake batter that is. 

Since I've been doing a lot of research on pancake holidays this week, I've noticed a theme in pancake comments from cooks. It seems that the best and thickest pancakes always come from buttermilk pancakes. That's the 1st tip. The second tip is to NEVER over stir the batter. Over stirring causes the pancakes to to tough and chewy. The batter should be thick and always lumpy. Say what!!! Did you say lumpy? Yep that's right.... "Let It Lump!" "Over mixing is a major mistake. Let it lump for the best batter it takes.

Easy Pancakes from Scratch

Ingredients

  • 1 cup  all-purpose flour
  • 1 ½ tsp baking powder 
  • 1 pinch salt
  • 1 cup buttermilk or 1:1 mix of milk and buttermilk)
  • 1 egg
  • 1 tbsp white sugar 

Procedure

  1. In large bowl, mix dry ingredients together until well-blended.
  2. Beat Egg, add to milk
  3. Add milk to dry ingredients and do not over mix / best with a few lumps in batter.
  4. Pour ladles of the mixture into a hot non-stick pan, with oil one at a time.
  5. Cook until the edges are dry and bubbles appear on surface. Turn; cook until golden. Yields 12 to 14 pancakes.
