Cherry Chocolate Rum Croissant Bread Pudding

I wanted to find something to satisfy my craving for bread pudding and found this delicious picture of croissant bread pudding with chocolate sauce. 

Then I looked at regular bread pudding recipes along with bread & butter pudding recipes. The more I read the more versions I kept finding. I had no idea there were so many! I think I will pass on the Summer pudding recipes and just go with something that's a mix of all the others. Except I think I will make it a little boozie for today~  Here's what I came up with~

What is Bread Pudding?
Wikipedia encyclopedia says... Bread pudding is made with stale bread and milk or cream, generally containing eggs, a form of fat such as oilbutter or suet, and depending on whether the pudding is sweet or savory, a variety of other ingredients. Sweet bread puddings may use sugar, syrup, honey, dried fruit, nuts, as well as spices such as cinnamon, nutmeg, mace, or vanilla. The bread is soaked in the liquids, mixed with the other ingredients, and baked.

Ingredients:
  • ¼ cup semisweet chocolate chips
  • ¼ cup rum (leave it out if you want)
  • 4 eggs
  • 2 cups whipping cream
  • 1 teaspoon vanilla extract 
  • 5 tablespoons sugar
  • 6 large day old croissants
  • 2 tablespoons butter 
  • 1 cherry pie filling
  • Nuts if ya want

Procedure:
  1. Butter a baking dish.
  2. Lay in flat the day old croissants
  3. Spread cherry pie filling over each croissant
  4. In a bowl, whisk together the eggs, whipping cream, vanilla extract, ¼ cup rum and 5 tablespoons sugar.
  5. Pour egg mix into the loaf pan and let it soak in for a minute.
  6. Add the rest of the pie filling
  7. Sprinkle the chocolate chips on top
  8. I also had a handful of left over walnuts and pecans and tossed on top for the heck of it.
  9. Let sit for about 10 minutes while preheating the oven to 350°F
  10. Bake for 50 minutes. let cool for 10-15 minutes


Serve with Rum Sauce, Chocolate Sauce, whipped cream or vanilla ice cream.

Guys it turned out realllllly good! Keep in mind the size of the croissants will determine how much liquid it soaks up. More bread means a more bread like dessert / more liquid means a more pudding like dessert. Both are great so adjust to your liking. Have a blessed day!
